Cabbage Casserole, a delicious side for any meal

Ingredients:
1/2 cabbage, cut up
1 medium onion, sliced or chopped
salt & pepper to taste
1 can cream of chicken soup
or 1 cup homemade cream of chicken soup, recipe below
1/3 cup mayonnaise
1 stick of butter, melted and divided
1 sleeve butter crackers, I used Ritz
Directions:
Preheat oven to 350 degrees
Add cabbage, cut up, to casserole dish, 8X8 or 9X9. Scatter cut onions on top of cabbage. Salt and pepper to taste. Using 4 Tablespoons of melted butter, sprinkle over cabbage and onions. Combine cream of chicken soup and mayonnaise. Spread over cabbage. Crush crackers and combine with remaining butter. Spread over cabbage and soup mixture. Bake 45-55 minutes or until cabbage and onions are tender and bubbly.
Homemade Chicken Soup
4 Tbsp butter
1/2 cup + 2 Tbsp flour
2 cups chicken broth
1 chicken boullion cube, or 1 tsp Better Than Boullion
1 cup milk
1/3 tsp onion powder
1/3 tsp garlic powder
1/3 tsp salt
1/3 tsp pepper
Heat milk in microwave for 45 seconds. This will prevent curdling and lumps when added. Set aside.
Melt butter in saucepan over medium heat, about 3 minutes or until butter foams. Add flour gradually, whisking well. Remove from heat.
Add chicken broth a little at a time, whisking well after each addition. Add boullion, milk, and seasonings.
Return to heat and cook until soup begins to thicken. It will thicken more as it cools. - บันเทิง

I remember peeling potatoes with my grandma when I was little. She would sit in her rocker and peel a 5 pound bag for our big family. She would let me help peel and then fuss at me when my fist sized potato would turn out the size of a golf ball 😂

I make this casserole. I put a ring of kielbasa in it. (Slice it up then boil it for about 5 minutes) drain it and then put into the casserole. It gives casserole a wonderful flavor.

The cabbage casserole is delicious. Only thing I do different is add 1 C. cheese before putting the topping. It is a very delicious recipe, we usually have it with meat loaf and mashed taters.

Hello Karen, greetings from England! I love quick and easy recipes, so when I came across your video, I was intrigued! I also love chicken soup, so I knew I was going to love this one. I've been thinking about making this for days and today, I made the cabbage casserole. I've got to say, it is the best! It is sooooo easy to make and the results were even better than I thought they would be! I added small pieces of potatoes to the cabbage and onion. As I love chicken soup, I didn't add the mayo to it, but I did add a sprinkle of cheese on top of the soup. I normally finish off by adding breadcrumbs on top, but your idea of crackers was even better. I used the Ritz cracker biscuits and these are so much easier to crush than bread! I wasn't sure how much salt would be right, so I did what you did and just sprinkled it over the vegetables and this was all that was required. It is so delicious and if you've got guests coming over, they'll think you've put a lot more effort into cooking this. To those who are going to try this recipe, please note - when it comes out of the oven, it would've dwindled down a lot as the cabbage will be cooked and flatter now. Therefore, if you want to make this for your family, I would use your biggest casserole dish. Thank you for sharing your video, Karen. This is one of the quickest and tastiest dishes I have made! 🙂
