    I lived in Southern California for 20 years and took classes at the California Sushi Academy in Manhattan Beach. This is the BEST explanation of how to process a tuna I've seen. I bought an apron because this content needs to be rewarded. Thanks Tako.

    19:17 I like to use a mesh colander and run water over the rice while I give it a little tickle with my fingers. Just a simple hack I wanted to share.

    I wonder if a Vertical arrangement has potential as it may improve function as hanging it vertically might be simple while freeing up surface space.
    A center folding herring bone V arrangement with three or four sections might be super versatile.

    I learned from my mom the other day that it's called negitoro not because it's usually negi and toro but because the actual technique is called negitoru and I was so shocked. I'm really happy I got to see this process from none other than taku lol, really awesome video

    As Always, Taku...XLNT knife work! Here in Hawaii, locals Cherish the ahi bloodline...No matter what type of fish, be it yellow tail ahi, bluefin (maguro), skipjack (aku), mahimahi, etc., etc...The carcasses also make XLNT soups!     I tried the tuna collar over the weekend. It was amazing!! I waited 2 weeks for my local fish guy to get one. Called me on Friday and I was more excited than a person should be probably about a tuna collar. Thank you and love your channel and journeys.

      You should try yellowtail collar too. Just the way Taku did it in this episode. In a habachi grill over a nice bed of wood charcoal.
      Best at nighttime while you and your buddies are sitting around it like a campfire waiting for it to finish cooking. Cold beer in hand. And a nice hot bowl of steam rice. Eat right off the grill as it bubbles in its fat and juices. Whiff of fat dripping down to the charcoal below and smoking off into the still night skies. It’s pretty magical for those who can appreciate freshness and company in that way.

    If you go out and get a few fish, one thing I’d recommend is cutting the belly out with the collar, and then lightly smoking it.
    The fat in the belly renders beautifully into the meat and you’re left with absolutely succulent pieces of fish. I usually make a soy-ginger marinade it then finish with citrus or ponzu
