actually, if you want the battery to last, reduce the use of fast charging and if the battery is completely empty, it should be charged immediately.

If you charge the car from the battery while charging the battery from the car will it disappear into a void of infinity & cross into dimensions the Olde Masterse have never seen?

Next episode: connecting the car to an oscilloscope? 😀 BTW, the plastic part probably doesn't have any frequency on it or anything because it's just a pass-through, all the real stuff is inside the car (the plastic thing is too small to hold any 3kW power electronics).
I'll have a guess. The EcoFlow has a pulse power source (mostly all electronics and chargers have) and the inverter in the car that produces the AC is something similar in reverse. They may have some capacitors or coils in there that are the same size or same natural frequency and create some kind of interference or resonance. That happens only after the ecoflow stabilizes the power, until then it changes the power and therefore the frequency of drawing power from the car all the time, so the resonance doesn't have the time to grow. I'd say it's not something wrong with either, but a bad luck of them meeting each other.
I'll also guess that this'll work fine with a laptop (because its power source is much weaker and won't be able to resonate the bigger stuff in the car) and will be fine with things like heaters, lights, etc, because they are just resistors.

This adaptor plug is just a quick/cheap hack to turn your car into a power source. The 'V2G problem' is likely that the PFC (power factor correction) of the Ecoflow is unable to phase lock if the AC output of the car is not a clean sinewave or just too unstable (the blinking 50Hz light hints toward that); but I will need to do some measurements to confirm this :) Please note V2G is mainly intended to be working as a 'grid-tie-inverter'. eg: sync with the sinewave of the grid and inject current into it. The way you are using it is 'experimental' and different countries may have different regulations and that may affect the interoperability of this setup.

Small load devices like laptop charger might not cause herz to change. Anyway, cars electronics should not do like that, faulty component...?
