- This is an beautiful quick recipe for a chilly Autumn day. It's way more than just cheese on toast and only takes minutes to prepare. Plus the simple savoury jam makes it a winner for any day of the year!
This recipe was first seen on the Jamie at Home TV series in 2007. All the food made in this video was shared out and eaten among the very lucky crew. Nothing goes to waste.

Jamie at Home was the single greatest food series ever made
this used to be mu grandfather's favorite when he lived in the school hostel as a boy. I love doing it for a |Saturday brunch.
Looks great and of all the recipes I have seen for Welsh rarebit the simplest.

I've never seen Welsh Rarebit done like that before. The chilli jam must taste soooo good. I'm hungry now!
Posh cheese on toast. Proper Welsh Rarebit uses Caerphilly cheese, mustard, Welsh beer plus egg and milk . It looks very similar to the end result in this video , but the taste is very different. Welsh frothy bitter gives off a lovely hoppy aroma with the cheese. Need a really thick hunk of fresh homemade bread as well.

I'm pretty sure that was the original name but it was changed to rarebit because there is no rabbit in the dish

That's right. I'm from northern France, and here and in Belgium Welsh is one of our regional flagships, as weird as it may sound. And we always put beer in there, and melt some mustard in the beer.

@@GothicKittyMadness Cook for a couple of minutes, stirring to prevent the roux from burning. Stir in the warm beer by degrees, until you have a thick but smooth sauce. Add the grated cheese and stir until melted. That on the BBC website to love google is ur friend

OMG. Perfection right there. Will leave out the egg yolk ( no need- will use Veganaise instead) and have that with a perfect big winter beer or a huge cup of good hot, sweet, milky tea!

Totally thought this said rabbit. (Dyslexia) and I was sooooo confused. But this looks delicious as well.
Apparently it originally was called rabbit and has evolved to be known as rarebit.
I always thought Welsh Rarebit had worcestershire sauce mixed in with the cheese and egg? Have I been making it the wrong way all these years?

This isn't a rarebit! No bechamel, no ale. You don't use crème fraise or raw egg. The chilli jam was more a red pepper and onion jam. What a lot of tosh! As for that music, well!!!

Actually, this was originally known as Welsh Rabbit. The first published recipe for this predates that of Welsh Rarebit by some years. Rarebit is a corruption of Rabbit. Back then there was no crème fraiche. This is not the original recipe but a JO makeup thing. Tried it and dumped it probably because of the acidity of the crème fraiche.

Sorry Jamie ... "Perfect Welsh Rarebit"? With chilli jam and black pepper? When you started out you knew cooking good food brings out the taste of the food. Lot of TV chefs now, their recipes are just different ways of serving pepper and chillis in one from or another? There are other things you can use? Why not try post some vids on traditional dishes ... and cook without any chillis, no black pepper, no curry powder?
