    What is the advantage of this mod over the stock configuration? Both burn for many hours at 275-325F with similar amounts of charcoal

      It has no advantage. I cook brisket for 12 hrs on bronco. Added a half chimney wirth after 9 hrs. This mod also defeats the purpose of having ribs hanging. You want the fat to drip down on fire. That changes the flavor if the ribs.

    I must say that is pretty Fing cool. The bucket, butter heating up top. the butter on those ribs, cheese. great recipe brother. great show.

    I love you sky is great however, we’re missing a part of the ball game here. The whole reason for a barrel type smoker is so that the grease off the ribs can drip onto the charcoal and come back up with delicious smoke to flavor those ribs or whatever you have on there we need the grease

    I knew last week you were on to something. This is kinda like a gravity fed vortex and we know hot them suckers can get. I did 2 racks of spares with no wrap and had my 1st pull off on 1 rack. I always use the grate you used on top of the coal basket when not using the deflector. Cool vid and the ribs looked great...

    I see you went for the name brand cheese, good choice. Impressed with how long that charcoal lasted and a little surprised it didn't smother out. I wasn't sure how that was going to do, but it did a good job.

    I think You've been watching that HeavyMetalBBQ Guy too much! :-)
    Like your willingness to experiment and try something different. 👍 I'de give up on the "Gravity" idea. Just fill the bucket and lite the top briquettes and let it burn down.
    I've found it easier to control temps this way. With the lit briquettes on the bottom, once the briquettes above start to ignite, temps get way to high and out of control when
    you open the lid. A true Gravity fed has a shut lid on the charcoal chamber with an oxygen supply on the bottom which only allows the briquettes on the bottom to burn, controlling and maintaining desired temps. I'm saying all this because I too am looking to some way some how add a "Gravity" style chamber in a typical charcoal smoker. My past attempts
    had so so results that kinda worked but not a True Gravity set up. Metal On! \m/

      The temps In the Bronco maintained really good. I think the top down approach would choke the bottom coals with ash before you could burn those coals. Bottom up approach gathers ash in the bottom, then burn up filtering ash in the bottom, and in my opinion, used less coals. O yeah, I watch a lot of that Heavy Metal BBQ GUY, he is one of the most innovative people I watch. Thanks for the support and watching brother.

    Glad you were able to control the burning on the coals the way you did. I was concerned the rising heat would be hard to control. Well done. Me and my fellow Texan watching the video don’t get the cheese part, tho. Lol

      I made the Garlic Butter Parmesan ribs a few months ago and they were a HUGE hit, it’s actually there favorite way. I may make an official move to Texas if They succeed from the nation and become there own country. Lol. Thanks for the support and watching brother.

    I watched your Bronco turkey cook from last November. Your recommendation on the OJ Bronco was spot on. I got mine in January on clearance at WalMart for $184, normally $300. Very well built with a lid gasket (necessary for temp probe wiring) and heavy gauge steel, not the thin gauge crap with plastic wheels. Very stout. It's a fun cooker you can use as a simple grill too.

    Mod looks great & it works pretty well. But I had a thought about putting a grill grate expanded steel with 1 to 1 1/2" legs in the bottom to keep the fire higher than the ashes that don't fall through the holes?

    Cool concept, what is the quart size of the pail? Is it from Amazon? Looked on your storefront did not see a link.

      I haven’t added it to my store front, I need to. I think it a 5 or 6 quart Stainless steal pail. Go to Lowe’s or Home Depot first and look at the size to make sure. Thanks for the support and commenting
