Seasoning My Oklahoma Joe's Bronco

  • In this video I season my Bronco. I used a spray can of canola oil. I made sure to spray the inside all around. I used a Weber wax cubes to start the charcoal in the charcoal basket. I kept the heat at a high burn of 450f-500f. For the last hour I let the temp in the Bronco drop to as low as 250f. It took a total of 4 hours to season my Bronco. 9-22-19

    A Tel-Tru thermometer fits it perfectly. Or any thermometer of your preference with a 1/2 inch NPT. I put a BQ300 black on mine with a 2-1/2 inch stem. You can go longer, but then you cannot put the grate on the lower hanger. I recommend getting second grate. I have smoked wings using both grates at once. Halfway through I swapped out the upper a lower grate. Wings were on point.

      I will look into another temp gauge. For a second grate I will looking at Weber smoking mountain 18inch grate. Still looking around for better deals.

    my bronco was delivered two days ago . assembled it yesterday morning and fired it up to seasoned it about 3PM . got a pork shoulder out the freezer yesterday to christen the bronco on it's first cook in a few days . been enjoying your channel for a few months . take care dude and smoke one :) . jeff

    Is it good to do a initial season to burn off the factory stuff and then a second season with your choice of oil after?

      I had done that in years past but getting back in the game. Starting my burn off now. Thanks partner love your channel. Probably move on to my actual seasoning with peanut oil tomorrow and maybe something on like a butt or two by Saturday night or Sunday morning.

    Have you come across any quality issues with this smoker? Have you used it in weather below 40 degrees?

      Thank you for watching and sorry for the late reply. I have had this smoker for one year now and I have had no issues with it. No leaks, no rust, the gasket has remained on holding heat and smoke in. Im still getting 15hrs of cook time. It is dependable and well made. I have only used it in the mid 50's. It doesn't get cold as much here in Texas. But I didnt have any issues getting the coals started and keeping it at a low temp when I cooked on it.

    How much wood do you add to start and how do you add wood while you are smoking?

      I just place wood chucks when I light the charcoal. I place what I think is enough wood chunks for how long I plan to cook.

      It all depends on how much smoke flavor you want. You can add 4-5 wood chunks in the charcoal and when the lit charcoal creeps up to the wood, it will smolder and burn the wood. Kind of like a fuse. With a smoker like this, it will primarily be charcoal (briquettes or lump) giving you the heat.

      I love it. It holds the temp that you want. It can go for 12 plus hour cooks when charcoal lit correctly. You can purchase a second grill grate for more cooking space. You can move the charcoal basket up to grill. It can do a lot.

My probes have been around 10 degrees off from each other though not what I wanted to see but I put the grate in and moved them both towards the center and it’s been 5 degrees difference for the last 30 mins. I’m smoking a Boston butt tomorrow for pulled pork from a Reichlan recipe. Eventually I will make my own stuff but for now I’m learning.

      The temp gage will be off at times. Mine still gets that way when I'm using the cooking grate, which is why I use a digital thermometer to read temp of grate level. But when I hang meat, I go with what the bronco temp gage reads. How does it feel being an owner of a bronco now?
