    What else can one ask for........the Mrs. was happy and You were happy! That was wild.....Doritos as a starter!
    Nice....a couple HMB techniques! :-) Hope you found them to be beneficial for your cook. Next time I wouldn't waste rub by putting it on the membrane if you are going to pull it. Another tip would be......don't leave the lid open longer than you have to. Get that lid Closed as fast as possible and even close your intake damper when opening the lid. Doing all that wrapping and prepping.......you had flames shooting out of the pit.......that's wasting fuel and temps had to be Spiking! No wonder the smaller rack was done so quick. Nice Coke glaze and the second rack was perfect! 👍 Thanks for mention Brother! Smoke On!

      Heavy Metal Bar-B-Que I mainly seasoned the meat on the back, but yeah I don’t need to put anything on the membrane. You are a Great BBQ MIND and you make a lot of sense with the water and leaving the membrane on, It makes a huge difference. I do need to keep the lid open as little as possible on these Barrel type cookers. I don’t really think of the spikes to Much cause the temps settle down rapidly. I knew the one rack would get done sooner because of its size, which was perfect for my wife, and the other allowed me to mail it perfectly. Overall I was extremely happy with this first cook at hanging Ribs. Thanks for the support and watching Brother. Metal On!!🤘🏼🤘🏼

    I hang ribs in my barrel house all the time and it is by far my favorite way, great flavor every time. Never lost a rack yet, and amazingly have never burnt them either; I do pull the membranes. I am still honestly shocked they do not burn, but there is something to the whole convection thing I guess. I have never thought of using coke as a glaze, may have to try it. I do like my sauces, so maybe a tough transition. Love the Doritos hack.

    Both racks looked great, like them either way, liked the water only and pulling membrane of later, have never wrapped food while over the heat source, only after the cook...like the smoker as well...most chips have grease and can be lit for fire...so there ya go...

    Nice... I just can't pull the trigger on a barrel type cooker yet. But some of the Walmarts are already marking them down to $99. If one around me drops to that price I will be coking on a Bronco.. My wife loves them no bone ribs also. I joke and tell to go to McD's n get a McRibb. But I also know who butters my bread so 1 rack fall off the bone done... Great video. I like your no BS way of thinking...

    You can also use Fritos as a charcoal starter, but I normally just use newspaper (finally a good use for news...lol) with my chimney.

    Hung my first two racks for lunch today. They came out fantastic!! Better than my stick burner hands down. Packed full of flavor and a slight crust all over from the rub and spritz. Spritzed with JB Apple Bourbon and smoked over lump, apple and cherry. Removed the membrane and they held on just fine. BTW, I double hooked each rib just in case.
    Two issues I've had with this cooker, a stubborn leak on the left side that tightening of hardware won't cure. Called Char Broil and they said to use a bit of sealer for BBQ's. They also offered a bag of hardware if I felt the screw was stripped. The other issue is my heat diffuser warping, so they're sending me a new one. Their customer service is top notch. Really liking this cooker and just may replace my horizontal stick burner for small gatherings.

    I agree! Just did a few ribs in 25 degree Chicago weather! Came out fantastic. However. I seasoned it for about 8 hours and this was my first cook. Thermometer on drum and my thermoworks smoke never saw eye to eye.

    Can you make any comparison with the Bronco vs. the Pit Barrel Cooker? I am trying to decide between the two.

      Pit barrel has more assessor he‘s, the bronco is more heavy duty, and I’m developing a charcoal basket for it as well that will also fit the pit barrel Cooker. I’ve never had a pit barrel, however I hear great things about them. I personally love my bronco, And it is in my top two favorite smokers to use. That may have not offered much. Sorry.     Big fan of your work. I have smoked a few times a week since a purchased the Bronco on April 1st. I just wanted to throw something out there...
    Tonight I ran out of wood chips when I was smoking some burgers and bacon, so I decided to clip a few sticks of fresh rosemary from my front yard. It was actually pretty damn good. Had the sweetness of mesquite, and was low maintenance as far as prep goes. If you have the opportunity, I highly recommend it

    Awesome video, definitely trying the soda glaze. I'll say this, the first time I smoked ribs on a drum smoker it made me rethink how I've done ribs in the past. Drum smokers made some excellent ribs and it's so easy!

      Michael Walker the cook top is a Precision2 induction cook top, I Bought it at a pawnshop for $30. The temp probe is a barbecue dragon

    How do I regulate my temperature better? I have the same smoker. I think I might be using too many briquettes when I get it started. It holds very well between 250-300

      Firewall03 do the minion method with like 10-15 coals in the center. 250-300 is perfect. Play with the dampers. I keep the top wide open and crack the bottom. Thanks for the support and watching Brother

    I’ve never hung ribs, worried they would fall off. Guess that’s not an issue. Usually we have them standing in a rack on a bigger grill. Making ribs today. Root beer glaze here.

    Another awesome video. I’m on the look for the bronco I’m hoping I can get the score on it at clearance. Got my Acorn last Lear for less then half so I’ve been cruising through Lowe’s keeping an eye on it. I know a lot of people who use the BHVC and swear by the hanging of ribs. Anyways enjoyed it as always.

      Anthony Guegel Both are amazing to use, but I would give a slight advantage to the Dr Pepper. I don’t drink a lot of Coke, however I do like to cook with it. I do on the other hand drink Dr Pepper. Thanks for watching and the support.

    I love ribs that I can pick off the bone with a fork, overdone ribs are still fantastic ribs. Never thought of just cooking down soda....gonna have to make some surge glaze lol so many ideas now

      Jaime Hyatt I can honestly say it would be a guess. I think the Fat dripping onto the coals gives an added flavor. It’s hard to describe, but hanging them produce a great product. Laying them on a rack doesn’t give the added benefit of the drippings onto the coals unless it’s in a Drum type Cooker. Thanks for the support and watching

      So I have a Weber Smokey Mountain and did my first rib cook on it last week. Came out very nice. I am going to invest in a rack that I can suspend ribs in that. The added benefit of more volume along with the elusive flavor benefit you talked about I am looking forward to. Thanks for the feedback.

    You mentioned where you set the intake to get certain temps. Where do you have your exhaust temp set? Is it wide open all the time or do you vary it depending on what temp you want. I’m having a hard time maintaining temp.

      Jake Unger generally the exhaust is open all the way. Temps can take up to 30 minutes to react to a change in the intake/exhaust, be patient and don’t chase temps. Another factor is your elevation, higher the elevation, the more air flow is needed. I have adjusted my exhaust from time to time but generally it remains 3/4- fully open. I hope this helps.     What up, Cuz'! I've been looking at getting one of those Broncos and I think you've convinced me. Don't get me wrong, I'm a Weber guy through and through, but being able to Q' more than one rack at a time is awesome. FYI, any chip with oil will get a good fire going. It's a good survival hack. Also, born and raised in Mobile, Al. Dad was from Jonesboro, AR.

      I haven't used my 26 weber with Merlin every since I've had my bronco. Don't get me wrong my 26er is going no where but I'm loving the bronco. I wish the pro model was more affordable

    Seasoned the OKLA Joe Bronco this Am. The factory thermometer and my bluetooth remote read 50-60 degrees difference when they were 2/3 inches apart 1,2 hours in with the lid closed. But I later did the boil test looking for 212 degrees and they were identical. anyone with any thoughts, or know what I am missing? thanks...BTW,, great looking ribs.i

      Steve C I appreciate it. It takes the temps gauges a little while to get calibrated. If you got it this quickly your doing Good. I have seen 3-4 cooks before the temp gauges will react accordingly. You are going to love this Cooker. Thanks for the support and watching Brother

    I don't own an OKJ Bronco, but do own a BHC, I always remove the membrane before I hang the ribs and have never had any issues. How strong are those rib hangers? How many racks of ribs would you do at one time? I like the coke glaze.

      Russyl Royer that Coke glaze works amazing on chicken wings as well. I don’t know how many Ribs the racks can hold, however the racks are very sturdy. I have a BHC as well, but it’s heavily modified, I haven’t done ribs in them yet however I would imagine they would come out similar to these. Thanks for the support and watching Brother.

      Trueblue2053 90% of the people like a fall off the bone ribs, including me. I like meat cooked savory, sweet, spicy, Indian, Caribbean, Etc. Pork isn’t my favorite either, but it’s so simple to cook, however my favorite protein to eat is Seafood and fresh water game, including the Ducks that swim in it. Lol.     Not sure if anyone asked this but whats the lowest temp you can go without putting the fire out? Just wondering if it can go around the 150 mark like the WSM i have seen. Looks like a decent smoker

      Misha Pesic Great question; I haven’t gotten it that low, however I have got it to around 175-200 and I do that by getting everything up to temp, top vent full open , intake at the half mark, watch temp, then make adjustments like moving the top vent, you should be able to get 150.     What do you keep the top stack at to maintain that temp? My chargriller akorn is my first smoker and responds to temps from the top vent vs. The intake on my bronco. Smoking my first butt today on the bronco.

    That was interesting. I had never heard of just reducing a pop (probably a soda down there) for a glaze; though I did make some Cheerwine BBQ Sauce that incorporated cherry soda into the other ingredients. I think I would rather eat the Doritos than build a fire with them; though I'm not surprised that they burn well. Along those lines, if you are lacking a long-reach match to, say, light a pilot light or a gas lantern - try using a piece of uncooked spaghetti - same principle.
    The ribs looked great, but it looks like your place has a bbq gremlin. At least she's happy; that's always a good thing. Have a great week.

    How is the Bronco issued thermometer holding up since you’ve had it. I noticed on WoodShedBbq assembly video he swapped his out day one. And I heard another pit master say his thermometer keeps fogging up. Thoughts?

      I'm not impressed with the thermometer. Some other videos said it took a few cooks to get it to settle in. I'm a dozen cooks in and it is still 50○ low. The thermometer is junk however, I do love the Bronco.

      I just pulled the trigger earlier tonight. Wal-Mart is on clearance right now at $184.00 plus tax with the fixed air intake tube. From what i gathered on the internet, people who got the Bronco in the shorter retail box (about 24" tall box) got the defected intake tube. Wal-Mart retail box is about 40" tall, and the drum body is already put together.

    Thanks for posting. Very informative as usual. Larger rack looked awesome. Love the mid-way through membrane pull hack. If you had to do 3 racks would you stack them when you hit the rap stage?
    Also, you mentioned the 4th line being somewhere about 350°-400°. Is there any way to achieve temps up around 500° for a couple pizzas? Hmmmm, would you consider doing a pizza video with the Bronco.

      Tony Visconti OMG what great questions. I think the bronco could achieve temps at 500 or more if the dampers were wide open, and or the lid was partially open for more airflow, you should then get a lot higher temps. I have not thought about making pizza on the bronco, however it is a great Idea.
      I would modify my rack and use another 18 inch rack to go on top with clearance. Thanks for the support and watching. Once again, awesome questions

    Ive had a Bronco for almost a year. Would be great to find videos on temperature control on this cooker. I can't seem to 'dial in' and have it maintain 250 or so. Any tips?

      I’ve talked about it many times in almost all my Bronco videos. Leave the exhaust fully open, adjust temps with the intake. Start at 3-31/2, wraith 20-30 see where it settles at, then make small adjustments from there, wait at least 20 minutes per adjustment. Hope this helps. Thanks for the support and watching
