    We just processed our first 3 pigs. THREE! A total on hoof weight of 1200 lbs and my husband and I did it all by ourselves. This video was invaluable! On the first one, I literally ran in and out of the house watching each segment and then going back and doing it. Thanks so much for this one and the skinning video!!

    I raised my own pigs and cattle this year. All of The Butchers were over a year out in my area. I really appreciate these videos! By the 3rd and 4th Pig I butchered, I was able to turn this video off and do it myself! Cannot tell you enough how much I appreciate this detailed video!

    During this pandemic, living in the Midwest I was able to get an entire hog for pennies on the dollar on a hog that wasn't able to make it to the processing plant. Your video allowed me to learn and see how to do the processing at home. I can't thank you enough for sharing your knowledge.

      @@Quagigitymire I raised my own pigs this year and used these Bearded Butcher videos as a guide. Overall it turned out well. I had some butcher experience with chickens. Overall I'd rate the difficulty as medium. I do think anyone with some decent knife skills could manage it.

    In the Philippines, the pig's skin is the priced part of the pig. The whole pig is roasted until the skin becomes crunchy. The stomach of the pig is filled with different spices and herbs that make the meat tender and delicious. The slices of pork you made are beautifully butchered and will be nicely prepared for a gourmet meal. Thanks a lot for sharing your vlogs.     I worked in a packing house for 23 years. I worked on the kill floor and the cut floor. I know you can not cut meat in the same way we did. But I am very impressed the way you cut meat.

    When I was a kid, we used to live in a farm with alot of live stock around for selling, for breeding and for meat, so we would always watch with wow faces, when our dad chopped up an animal.. Huge amount of skill and knowledge goes into this work
    Now I always buy meat from local farmers, who grow their own meat, they deserve that support so much more than those huge ass companies

    Absolutely fascinating to watch. Puts into perspective the effort and craftsmanship that goes into something a lot of people take for granted.
    Also, after having multiple instances of bad ribs with disgusting undersides, watching you strip the membranes off the babybacks and spares was supremely satisfying.

    Ok, butchered a pig long ago before watching this video ( had no idea what i was doing). Some time later found these guys and though wow thats amazing i'll replicate this when i do my next pig. Over a year later i got a pig and even though i remembered this video, i figured ill be close enough to what they have done. Let me tell you i've "butchered" that swine and came out with a bunch of meat that i will use for soup. and maybe for some bbq. No pork chops, no ribs (just a mess of odd ends and pieces). Tenderloin ended up being a? pork belly was a mixture of everything. My only saving grace that i can slowly bbq bigger mangled pieces to something edible. To say what these guys are doing and showing is a dying art is not an over statement. Please keep making these kind of videos, and include details and explanations of what you are doing. Thank you.

    I have been using the same dollar tree knives for like 7 years for regular cooking. This video makes me want to invest in some actual sharp knives.
    This is a really great video. It’s a great reminder where that meat that comes in styrofoam and cellophane comes from, and that someone processed it, allowing me to have a meal. Thanks!

    I've learned so much watching these. I have Crohn's and can only digest mostly meats without becoming ill. And it's been so helpful to learn what each of the cuts are so that I can then go look up recipes of how to use all the different cuts so I'm not so afraid of trying a cut because I wasn't sure what it was or how to use it. It opens up new menu items for me, and so I'm not eating the same thing all the time. Thank you!

    Thank you dudes for this ... I just processed my first pig from soup to nuts over the past 'couple days (she was a monster ... probably 350+). Can't imagine doing it any other way again. I was watching this as I was making all my cuts :)

      The Bearded Butchers I did a 450# sow a couple months ago using the bail Speer on our tractor like I have done many hogs and deer sure wish I would have seen these videos frist now I’m doing another one and this is a lot easier

    Fellas, this is exactly what I’ve been looking for. Finally a home processing video that shows some detail. I’ve been raising hogs for 10 years but never butchered one myself. Hopefully soon the shop will have the tools needed to make it happen. Keep it up, I’ll be watching👍

    I've always enjoyed watching professionals who were good at their trades. Doesn't matter what trade it is, but those that perform well and enjoy what they do, stand apart in a very entertaining way to me. You both have that! You are both very good at what you do, and it shows!

    I used to cut meat years ago with my dad. This is how we do it too as you shown the the cuts expect we don't do the strings. Sometimes bone in but mostly more roast and shoulder roast, ham roast and fresh ham steaks, side pork. Yes, we did have it cured. We didn't have a smoke house but had someone do it.

    My father had a hog farm in Northern Minnesota, and I will always remember harvest time, and the chain hanging out of the ol oak tree. My uncles would come over and harvest about 10 in a row on a weekend, they did it the way you two do, the right way.....Peace, Tommy.

    I've been to Bangkok once where in a 4-5 star hotel infinity pool on the 22nd floor (Eastin Grand Hotel Sathon), a lady was constantly adjusting her tripod creating 'content' to feed her narcissism with meaningless likes.     Greetings from Switzerland. Learned with this Video to butcher a pig. It was definitely harder to convince the local butcher here to sell me half a pig and not waste it than it was to then take it apart. He didn't think I had the right knives.

      I’m this way too but like anything else it gets easier emotionally and physically with practice. The extra chemicals and dyes these corporations add to the meat Im certain these days its a matter of necessity to grow and butcher your own. We live in weird times. The dollar is preferred over people instead of simply being a tool of exchanged value.

    Hey guys, I live up in Canada and in the last year and a half. I’ve been creating a lot of my own food from fermenting to water, bath and pressure canning to butchering and vacuum, sealing my own meats. I don’t have a smoker yet. I have been buying equipment slowly but surely but it is expensive so I’ve been taking my pork belly squaring it up, adding my dry cure vacuum, sealing it and putting it in the fridge for about a week turning it over each day. I have also done this with a full picnic to create a shoulder of bacon Irish people usually cook this up with cabbage and potatoes. It’s basically like pulled pork only bacon flavour the bone and the fat makes it super delicious and you cook the cabbage in the water of the shoulder so all that flavour in fuses into the cabbage to. I also create a Irish back bacon, which is pork loin with a small little bit of the belly on it. I dry cured this up to. My question would be is dry curing a good way to make bacon or should I be looking into doing something different? I realize I don’t have a smoker to add other flavours to it yet but is dry. Curing a good way to make my bacon or would you recommend something else?

      When I worked for a butcher in Tavistock, Canada one summer we hung our meats in a small shed. We placed a big old cast iron kettle in the middle of the shed and filled it with wood kindling. Lit a fire in it and covered the top with a sheet of metal, leaving just enough opening for oxygen, but just enough oxygen to allow the wood to smolder.
      When I worked for Shenandoah Fisheries trout farm in Virginia, we smoked our trout with apple wood in a commercial smoker.

I live in an apartment building and I think my landlord might have a problem if I did something like that on the balcony lol I'm willing to bet the fire department would be called. Need to get myself a little homestead and live out in the country and then I could build all of these things as a bricklayer I could easily build smoke houses and wood stove ovens. Just living in an apartment at the moment not practical for the new things in life I want to do.

    You should get a terracotta pot that has a hole in the bottom and the base plate as well. Then you put your butchers twine on the plate and run it through the hole of the pot. That way you can keep it on the ground out of your way, won't get tangled, and you just pull as you need it. Works extremely well.
