    Where do we even begin to explain this one? How about at the beginning.. We've had a lot of requests for this, so here it is; how to butcher a pig 101. We've showed you a lot of this to you all before in a different setting. Today, we're in the butcher shop at Whitefeather Meats in Creston, Ohio and we will show you the entire breakdown of a pig, how to make sausage, how to make ham, and how we season our pork and vacuum seal the meat before we sell it. Seth is even going to stop early on and show you the pig anatomy first hand. This video has it all; pork chops, pork loin, pork shoulder, pork butt, pork ribs, sausage, ham and much more.     First is a bone in pork loin, pork sirloin, pork butt roast, and country style ribs. This is your bone in pork chop - 8:55

    As a career butcher, I can most definitely say that none of this is as easy as you guys make it look. Removing fat from the loin in one stroke is a work of art.

      @@davek4547 No 💩 Inspector Holmes ,like I said problem most amateurs/home cooks and butchers have is they end up using dull knives! happens way more than you could ever imagine,to expand a little I worked at this restaurant where one of our cooks actually said I don't know why you guys keep your knives so sharp ,he would use his dull one and would knick himself time to time and actually complain that he couldn't use the other knives cause we kept them to Sharp ...in reality him having to force the knife through things and the force from pushing down is what kept getting him cut instead of letting that sharp knife do the work ....

    Stopped by the store the other day. Just planned to buy a few cuts of meat. Ended up getting elk, bison, beef, and pork along with a bunch of seasonings. The store is just like Toys R Us was when I was a kid. Also, met both Seth and Scott. Really nice guys.

    I'm a 2 year apprentice as a butcher and theres lots of stuff I don't always get to do as the place I work at is so picky. But it's so cool that I can watch something and can relate some of the stuff I have learnt over the years to this, like I feel apart of something knowing things that not everyone can do. Thanks for the videos definitely helps seeing how others do things

      Where are you doing your apprenticeship? I'm a butcher located in Germany and just fascinated how very very different the process is. Different style of knives, we don't use our bandsaw that often, the bone pulling is completly different. It's crazy, I really like this videos

    For anyone watching, I can tell you after now having watched many of the Bearded Butchers videos. These guys are amazing!!! They are the most knowledgeable, clean Technique, Butchers I’ve seen. I am a retired butcher and yes was trained the old fashioned way, I was almost a certified meat counselor so I know what they are showing is 100% legit.

Let me say i love your videos, i've been watching them a lot, and i find it truly satisfying. i've been spending around 2 years as a butchers apprentice and it was some of the best years in my life, unfortunately the butcher i worked for went bankrupt a few years ago, and i wasn't able to find a new place to finish my education. but you guys make me miss the profession :)

    When I first came across the butchering a cow video, I thought I might be grossed out. I wasn't though. You guys are terrific at butchering! Your skill and knowledge are inspiring. This is my first year to ever buy a 1/2 cow and a whole pig, and send them to the butcher. It was fascinating to watch the whole process! This makes me appreciate the entire process that the meat goes through before it's available for retail purchase so much more. Your easy manner makes these videos a delight to watch! Thank you

    My dad was a butcher and watching your videos just takes me back to being a kid again! I'm 66 today and dad has been gone since I was 18 and I regret that he passed on so early in my life so that most, or at least much of what he tried to teach me might of had a better chance of being retained by my adolescent, hormone filled brain! Sigh. Quite a bit of what he taught me that I thought had long ago left my hard drive has been revived though through your videos! Thanks for that. I'm also in the camp that wishes you sold meat mail order but I do have a variety of your rubs that I use on the smoker. With this quarantine I am burning a lot of wood and smoking a lot of meat too! The OG I find really good on beef and Hollywood I like best on pork and chicken. I have a reason to visit Ohio now!
    But, how come the oldest doesn't have a beard?

    We never had the means to cure our hams. We cut them into steaks, deboned them, and then ran them through a cuber . Season them for the grill or season some flour and fry them. Delish.

    That back fat is tasty af just all flavour.
    My family are newfies we dice the back fat into cubes, oil fry it with onions & use it as a topping for Salted Cod or put some cubes into a moose stew for some added flavour…good eats.

      I’m serious! How to raise Bison, Cows, sheep, what ever you guys have on the farm. What machinery you use, do you guys also grow your own feed for livestock? Imagine two successful TH-cam channels, with merchandise and everything thing else that comes with it. Well at least I would be EVERY interested.

    I love seeing your commercial stuff I know this video is old but I just love this I've been a butcher for 33 years it's the only thing I've ever done since I was 15 years old, your operations above same size as mine was before I retired and sold my business so I love to see the commercial backpacks and other commercial equipment.

    I'm a single Dad with three kids at home, we are always on a budget. We don;t get to eat meat every day ... 0ne of my favorites is a big pork roast on sale with bone in and skin on!
    I cut it all up and grind it into patties (all the fat and skin too), using our "Kitchen Aid" grinder attachment .. Adding oats and onions etc ... make dozenes of patties ... got to love a nice pork roast! So versitile! :)

    As a 30 plus year restaurant professional chef. I noticed such a basic thing in your video that so often gets overlooked. Not only the beautiful,look to your meat room.(which tells a guy how much you actually care about what you do) But the fact that you render lard.     I live three states away in southern Illinois. These guys are so awesome at what they do. They are incredibly talented and just watching these guys do commonsense straightforward, honest approach to things is so refreshing I bought seasoning from these guys and other people seasonings. They were all good, but these guys have the best seasonings ever. And when you are using their products, it makes you feel good to support their efforts Thank you very much. i’m going to buy some knives from them soon even if they cost a little extra just knowing they have a good quality knife and it’s helping these guys out is fair enough for me.

    My dad was a real meat cutter like you guys , I used to go to his shop to watch him work when I could,always amazed me the skill in it . You guys are awesome , brings back a lot of memories with him

    You guys are fantastic. I worked for a butcher 30 yrs ago. A great friend that taught me skills that I carry with me today. As I watch how you guys break down and handle your knives it reminds me so much of him. Very smooth yet old school. There is a big difference between a meat cutter and a butcher. I tip my hat to you butchers

    I want to thank you guys whole heartedly. I had a dream to be able to raise my kids to know where food comes from. With a lot of work this summer raising our own pigs we were able to harvest them last week. This is something that I had the idea to do, I talked to a couple friends and they said I was crazy to take on such a task but said they would help. After hours of research and watching your videos countless times the day came. It went awesome. I am grateful that I was able to provide over 1600 lbs of meat for my family and friends. Again thank you for all of your knowledge and helping keep the home processing tradition alive. P.S. My wife got me your seasoning sampler pack and they are all awesome.

    Love the channel, I'm a new subscriber. With respect, I might recommend setting the camera to f/5.6 or f/8. There is on need for a bokeh effect with these types of videos. Everything should always be in focus (not sure if the camera you were using is set to autofocus, but it was noticeably out of focus throughout the video). Maybe look into a wide angle (16-35mm) lens as well. Thanks again.

      I usually use manual focus, tried using autofocus for the first ten mins of this one. Wasn't happy with it so I switched it to manual. I've been debating with the aperture, used to shoot at f5.6 and wanted to give f2.8 a try. If I can nail the focus on f2.8 I'll likely stay with it. But if it gets too distracting I'll definitely close up that aperture a bit.
      This is a new lens I've been using so just playing around with it and seeing what works!

Im a rookie pig farmer, Ive done hundreds of deer my self but no pigs, but I want to do it all my self including the curing and smoking so I have watched every pig butchering/processing/curing video I can find and you guys are my favorite!     Most butchers near me leave that membrane on the ribs. Nice to see you guys take that off for people. Not exactly the easiest thing to take off, especially if you have arthritis or something.
