    Hi Guys- Im am a 50 year old women and your video helped me so much! I did it by myself with a doe that was frozen and that made it a bit more difficult for me. In ND this year the temps were below freezing when this deer was taken. I followed your video and it really helped me. Some of my cuts are not pretty but hopefully I will get better over the years. Again THANK YOU for sharing this video as I was completely lost with out it.

      harvested, broke it down and final cuts my first ever last year. overwhelming AF to start, like they said though, pressure, angles and so on. it will present itself to just fall apart

    My Pro Tip. Save those shanks front and read. And then sear them off in a hot cast iron pan to get a bit of color. Then slow braise them with some beef stock, wine tomato paste and what ever your choice of vegetables you like, After about 3-4 hours of low and slow cooking you will have some very delectable venison shank stew with the most savory and delicious meat you never knew existed on that deer for such a lower end cut

    Nothing better than having a good friend that's a a hunter he always hooks me up with stuff and I definitely appreciate it , he's took me on some adventures he pretty much taught me like your doing your son ,I enjoy helping him process the game making , burgers ,jerky, sausage and packaging it up, there's no better feeling than firing up the grill with your friends and family and everyone enjoying the day and the food you provided while having a couple ice cold bottles of beer .

    At 27:40 you cut into a lymph node and it's best to not contaminate you knife and meat by cutting into it. Excellent video and thanks for teaching me how to better butcher my deer harvest. Thank you, gentlemen.

      @@TheBeardedButchers How do you prep deer ribs durring the butchering process? I had them once before and after eating 2 of them my tongue started to stick to the roof of my mouth. It made me to never want to eat deer ribs again.

    Never actually been into hunting before, but after watching this I think I could process the meat respectfully and want to try. My brother has a couple of rifles appropriate for game hunting, and now I think we just need to educate ourselves on field dressing so we don't mess that part up. Love all the vids from you guys. It helped me get confident enough to start breaking down whole primals myself and the results are just awesome.

    I could watch this 90 times over! Ever since I harvested my second deer, I was taught to butcher my own. I love how you guys go into great detail as to what you can do with each muscle group. I have learned so much from watching this. I honestly would have never thought about the 2 flat iron steak on each front shoulder! They usually ended up as burger, or a small roast. I'll be cutting flat iron steaks from them going forward! I can't wait to harvest a few deer this year so I can put this video to use, and put some mouthwatering goodness on the table. I also love how thorough you are about getting all the meat from the carcass! I hate seeing game wasted!

    One thing I love about living in Canada is the cool temps (for aging meat) during hunting season. Although even in Ohio I'm sure it gets nice and cool as well. Loved this video. Learned a lot.

    My family ran a grocery store and was 3 generations of meat producers/cutters. My father-in-law spent 30 years working in and around meat processing. All that knowledge and there are still times I'd like to have a deer, be by myself and take hours to watch this video at my own pace and butcher step-by-step with a better understanding of what I'm doing. Good stuff gents.

    Just a little tip I found with the neck. If you cook it down in a crockpot until it shreds apart, remove the bones add bbq sauce and continue to cook it makes great pulled bbq sandwiches
    It’s great for parties it makes a lot Thank you guys this is the best deer butchering video I have watched

    As a hunter i have developed my own ways of processing my deer. Usually I disagree with others on their ways of of processing animals. I was glad to find a video that I not only agree with but intend to use information from. Y'all did a great job with this deer and an even better job describing what you where doing. Thank you for the educational video. I would like a video on processing a bear, it's been years since I have done it myself and would love a professional guide/explanation. Y'all have earned my respect, and a subscription.

    I stopped deer hunting 10 years ago because of when growing up, i never had the opportunity to learn how to process the meat properly, There was no youtube & no matter who had venison to eat - It always tasted very gamey & smelled like actual shit....... UNTIL,, just a couple weeks ago a buddy had some venison that he had processed with the help of someone who takes hunting/processing seriously & I was pretty floored at the difference in taste !!!!!!!! Lets just say that I will be hitting the field this year since they both offered to help process my next deer..........

      I self taught myself how to butcher venison because it drove me crazy to pay someone to do what I knew I should be able to do myself. I really enjoy watching videos like this to either gather more info or to validate my methods. When you say in the past venison tasted/smelled foul, that is most likely from improper field handling. I'm a Laboratorian by occupation so in as much, I deal with bacteria. From the time you put the animal down, the natural Flora(bacteria) inside the animal grows exponentially and is giving off nasty gases. You have to get the guts and organs out asap and cool the carcass. That is the most important part of keeping the venison from obtaining the foul smell and flavor. Simply put, get it gutted as soon as possible after the kill and cooled down. Oh, if you get any gut material on the meat, you have to wash with a lot of water and hope for the best.

      @@Peakbase Preparation and care from the moment that animal is shot is everything when it comes to the flavor of venison. Poor shot placement, waiting too long to get the deer field dressed, improper storage during the hanging process(temps too high or low), not removing the silver-skin or excess fat, not removing the glands, all these things can contribute to very gamey tasting meat. Done properly, to the trained pallet venison has it's own flavor but to the average person, they likely won't even know it's not ordinary store bought beef. It should never EVER taste gamey. I've been butchering my own for a number of years and have been hunting all my life. The only time I've ever encountered a situation like that is due to my own mistake because I hit the animal poorly, rupturing the stomach and on top of that, I didn't find the deer for 6+ hours of tracking. All that combined left me with severely tainted meat and it was extremely disheartening. Thankfully that's a once in a blue moon type of situation for me.

    27:05....between the eye of round and the bottom round there is a chunk of fat and in that chunk there is a gland, and this should be removed....

    Thank you for the information. I shot a waterbuck over the weekend and used your video to process the meat. It's a little bit larger than the deer you did here (mine was just over 200 lbs), but the principles are the same. Took me about 9 hours, but it's in the freezer now.

    I worked the oilfield for 35 years and had a bad accident that put me on disability 4 years back.
    Needless to say I haven't been able to hunt in many years. It's true when you don't use your knowledge you can lose it. You guys have been great at refreshing the memory on the things.

    I've been a meat cutter at Hannafords supermarket for about a year now and I wanted to learn how to process game for not only myself but for some extra money. This video certainly helps and gives me a good idea on how to go about it. Now all thats left is some hands on experience. I was able to make some connections with what I do processing primals at the grocery store to the different portions of meat shown here. This was well put together, and thankyou!

    My neighbor JC showed me how to do a complete deer prosses from field dressing to butterfly back staps in 1978. As a 9 year old I was in awe. So here I am watching it still. The difference between Ohio deer and her in North Carolina is your extra trimming pile equals one full buck haha.

    Awesome content, I've hunted deer for nearly 60 years here in NZ and have never had venison ribs ! I usually just trim all the meat from between and along with most of fore 1/4 get it made into patties (burgers). One comment you made about being given some meat and just saying it's deer reminds me a a joke. Dad was given some venison and while the family are eating it the boy says "what sort of meat is this dad?" Dad says "it is what your mother calls me". The girl yells "don't eat it! its a fucking dick!"

    They make it look so easy. I look like a spastic head case with a weed wacker in comparison... And I'm one of the guys my buddies enlist to help butcher their game animals. I get the job done, but not nearly as smooth as they make it look. Those "little tips" their tossing out are priceless.

    Im in the south. I have always aged my deer in a cooler full of ice but the meat never this color or texture. This looks much better.

    Really great video been doing this for 50 years now. The big difference in what i do i dont grind. Just never cared for ground vinisen. I take all the chunks of trim meat and pressure can it makes great venison pot roast for vinisen splits. The canning process breaks down any sinews left and make it incredibly tender also slice my back strap about 1/2 to 3/4 inch to make great sandwich steaks.

    My Uncle actually has a fridge he bought just to age his game in if the weather isn't permitting in the garage or barn he took all the rack and stuff out and has it set at like 45-50 last time I looked at it and he put a hook in it and hangs the carcass in there or whatever else he wants to age before butchering and taking it into the house, very good and definitely comes in handy if you have a spot for it ...

    One of the best videos on how to do this and I have watched a lot, including australian guys who call the tenderloins "filet steaks."
    I hunt on pubilc land, so mostly, I will have to quarter and pack out a harvest. Except for two days. Opening weekend of general season and Thanksgiving weekend where I hunt, you have to bring your harvest whole to the USFS deer check station. They want weight data of the whole deer, plus a tissue sample to check for Chronic Wasting Disease. However, the state does have racks and gambrels so that you can go ahead and skin and quarter.
    So, now, I need to get a deer sled. Basically a thick tobagan with straps so that you can pull a deer over the rough ground. Some even come with a harness.
    I like cooking steaks and roasts and my friend, John would either cut his as medallions and fry them or cut chunks and make slow cooker stew. He once gave me a rack of ribs from a doe and I smoked it on my charcoal grill with mesquite logs. That was good. I also did a feral hog he gave me, that he skinned. I did not debone. I broke the back bone in two and smoked the whole dang thing. It is lean pork, which sounds like an oxymoron. Seriously, though, if you get to hunt feral hog, they are good eating.

      They keep the best cuts for themselves or to sell while charging you full price. I stopped buying cattle after our old butcher retired and left his son the business. You can get fleeced real fast with a bad butcher.

    Got to love this ! I used to hunt back in the day, like late 70s and early 80s. I hunted West Virginia, Maryland, and Pennsylvania. I've field dressed many of them but I hunted another friends property, and most of their meat was acquired during the different hunting seasons and eaten right away, dried or frozen. the whole mountain people "owners" shared in the spoils. They asked for half of the meat, but they were all fairly broke, while living life abundantly. They grew their own food, or hunted. They worked well with each other and to me it seemed they were living in the lap of luxury. I let them keep it all. I asked for two steaks and a lb. of ground meat. There is no better spaghetti than meat sauce of venison. Thanks so much for the memories ! I'd like to go hunt again one day, but now I live in Florida which throws a big assed monkey wrench into the drying, and aging. Do you have any advice ? I've always avoided deer hunting down here because the greyhounds at the track are bigger than our deer.
