I'm always amazed at the sharpness of the tools and the skill of the butcher, amazing!

How could you kill such a big Fish I don’t get it
@@jane-ew2jh r
Every cut is clean and almost surgical. A lot of respect is given to the preparation. Amazing!
It's not almost surgical, it is surgical. Butchers were the first surgeons. Back in the day you had to pray that the butcher washed his knife before he cut an arrow out of you.

@@DennisTea stop copying my comment bro.
@@Bretaxy That's why I said "almost".
And then he touches the till with his glove, the same glove that he touches all the tuna
Besides the skill of the butcher, the sharpness of the knives is extraordinary.

It’s 2 am and I have work at 6:30. What am I doing up watching a man excellently prepare a fish from start to finish
You are just like so many of us 🤯🤣
You will hate tuna after you see your boss at 10am...lols
A man of culture, I see. I'm doing exactly the same thing.
The cutting skill is amazing. Watched another video before this where it took like 6 people to cut the tuna but they were sawing away at it and tearing up the flesh. This guy does it all by himself and every cut is beautifully clean. Definitely a master.
+1
Thats because they don't skin the fish scales off like he dose
Straight surgical precision
He can cut u in the same way...will u like it..

I don’t even know why I start watching this but it got pretty interesting
this is the best video ever
This man is truly a master.
You can tell that he cut thousands of fish and has been doing this for decades.
The surgical precision, the confident cuts and the way he makes it look effortless to perfectly slice up a 250kg Bluefin Tuna.
This is true skill.
500lbs* that’s around 250kg
Notice how he keeps watering the fish? I think it's so the fish doesn't die. A true caring master

I thought Tuna was a type of small fish until I noticed the freaking size!
Depends on the species. Some are a couple of feet long, some are about the size of a small car. This one is an atlantic bluefin I think. Typically about 6-7 feet long.
The shape is that of a small fish... just large...
They use to be many times bigger than this. I saw one hanging up at a dock as a child and the men standing beside it were dwarfed by it. Over fishing.
Runescape will do that to ya
@@WorthTheRiskGaming underrated fucking comment bro 😂🤣😂

wow...sometimes i forget the amount of work that goes into filleting a fish of that size..I can only imagine how much a restaurant would pay a fish that size..amazing behind the scenes

A day or so before, this fish was living happily in the sea. And then just like that, it was all over. It's now a carcass on display for the rest of the world. What a life!
As the time will pass, more the human sensitivity will decrease further. I'm amazed at the comment section after seeing that so many people are just promoting this act happily.
@@dubbing8450 the problem isnt the act the problem is that bluefin tuna are going extinct and 90% of them caught are too young to have reproduced... they should halt all fishing of this species and allow time for them to recover before its too late

That looks good! Still doesn’t change the fact that Taiwan isn’t a part of China and the 9 dash line is not legitimate.
True. Taiwan is an independent nation, and all Chinese citizens should know more about its independence and the events of June 4, 1989 in Tiananmen Square.
Taiwan calls itself "Republic of China" so obviously it claims to be "Real China". Nobody recognizes it's claim to be "Real China" though.
Absolutely correct!

Those Knives and Katanas are so sharp, it made it look like the Tuna is made out of Gelatin, bruh im so impressed.
٠
Oooooooooooo
I think every knife use to cut this kind of fish has to be that sharp. You don't want to waste even one little tiny piece. Everything from this fish is money you know.
It's not a Katana
It's called a Tuna Kiri
Big difference as katanas were designed originally to cut down soldiers in battle it is tempered to a certain degree so it'll go through thin armor and possibly bone and not dull easily. Tuna Kiri's were not designed to go through solid materials. just meat. But they are extremely sharp. That's also why it can't be used like a katana. the thinner the metal the easier and faster it'll wear down the blade and dull it very quick.
Also not attacking ya just providing useful information
And also these Kiri's are very expensive blades to buy. This exact model they use is 1k usd
I do however wonder if one could re-temper the blade so that it can have similar durability to a katana. Possibly depending on the grade of the steel and whether or not it is folded steel or casted

Taiwanese masters are a lot better than the Japanese. These special knives and cutting skills can not be beaten.
The knife is what gets me. It's sharp enough to allow precise cuts on that tuna meat, but strong enough and never loses its edge when it's used to hammer and hack off the fins, bones and other hard stuff on the fish.
From what i've read it's because of the alloy they generally prefer in asian countries. I forgot the compound so to speak, but they often use a metal that is razorsharp but rusts quicker. So they also have to put in maintenance on that.
In the west, we prefer knives that don't rust. As a result the alloy changes. We got knives that aren't necessarily bad, they just need sharpening more often.
@@Fastbikkel Tamahagane is the alloy I believe you're referring to.
