That was a perfect encounter of a great knife with a horrible cheese. I did find some of my knives fail with cheese, that’s a good test. Congrats for the gardening , looks great.
Honestly I think they might have. I watched a test done by a channel who's every episode has the sole goal of breaking the knife. It was insanely difficult for him to do. He eventually had to hammer it into a stump, lay on his back with his feet against the stump to brace himself and had to pull like he was trying to pull the sword from the stone. I was really surprised at how well the Elmax stood up to it.
I really regret missing out on the Kickstarter. I've tried to pick one of these up on the secondary market but no one wants to let 'em go. Hope you enjoy it!

Interesting, I find hollow grind to be a pain in the ass to cut cheese with, at least after a few slices. I find as cheese residue gets on the blade, it will pull the sides of the cheese you're passing into the sides and the blade gets wedged in it. When I wipe the blade clean it'll be fine until the residue builds again.

I have the Spyderco version made of 01 tool steel and its ok. It's biggest down fall is the smooth as glass handle. Hey brother could you please try and get your hands on the new lionsteel T6 in bohler k490 superclean and do a test/review on it?!?!? I've got one and I am loving it thus far! I also have the M7 and I'm planning to get the M5 in 3V if I can find one at a decent price but those Italians really do make a great knife absolutely perfect fit and finish they're quite meticulous about that and this new K490 is supposed to be two times tougher than M4 tool steel even!!!
There's absolutely nothing about the composition of k490 that would make it twice as tough as m4; not in any objectively fair test or real word use. I'm sure they hand picked a test where the parameters result in an outcome that favors k490, but it's a ridiculous claim.

I would love to see someone make a straight razor out of Magnacut so I could shave for years without any major sharpening.
Looks very similar to the Bravo from Bark River, aside from the scandi
Much love brother...are you doing ok? You are looking thin... hope all is well with you
