- Crunchy on the outside, soft on the inside Perfect Nigerian Buns recipe for commercial production.
Materials:
Mixing bowls: any sizeable bowl you have.
Sieve and Colander
Slotted Spoon
Plates
Measuring Cups and Spoons
Ingredients:
15 level cups APF
2 tbsp baking powder
1 tbsp nutmeg
2 tsp salt
1 heaped cup sugar
1 tbsp yeast
1 sachet (250g) margarine/butter
1 tbsp flavor of your choice
4 cups (1 litre) water
75ml vegetable oil or more if using a large pot.

This is the exact process I use to prepare mine.
But just that I allow it for 30mims before frying so that the size can double both on ground and in oil.
Again, the 20 is much it needs space to increase as well.

You are welcome. The buns will only start getting hard from the second day onwards. There is nothing you can do about it.

That is because it is a commercial recipe. It stays crunchy for two days. But the shelf life is 7 days.

Refrigerate or freeze the leftover. Then, thaw and fry again or microwave it the next day.

It's 75cl please. You will need more oil, if using a bigger wok or pot.

You can store it in the refrigerator to maintain its freshness. But if you don't have access to one, you can just store in a dry container (covered). But it won't be so fresh anymore.

It depends on your location, packaging, client base and most importantly production cost. I sell between 100 to 200 naira depending on size and packaging.

How much can one buns go for now in the market?
It depends on what you want, the cost of production, your location and your social capital. Generally, commercial buns of those sizes in my video go for 100 naira each. So, do your costing and fix a price for yours.
What and what are the flavors you add to the water please
You can use any flavor of your choice. I prefer vanilla and milk flavours.
How do you know it has rise, and what if it stays like one hour or 30mins
Once it is properly risen, the exterior will toughen a bit and become less sticky to touch. Leaving it to proof for too long, will destroy the gluten structure.

It's the same as this. All you have to do, is divide the ingredient measurements into two equal parts and use one.
