My 9 years old son makes me prepare this for him most Saturday’s. With him helping to make the cheese sauce. This has even become my best potato chips method of frying, very crispy. With this channel, I have discovered how to make easy fun meals with my child. Thanks.

I made these tonight and they took me about a little over an hour from peeling potatoes to serving however if I had gotten the water boiling around the end of the wait time for the potatoes it wouldn't have been so long. I also stored my peeled potatoes that weren't yet cut into a bowl of water and placed them back into the same bowl after they were cut. I drained that bowl of water and let them sit in a fresh bowl of water but no more starch came out so that was interesting. I did not understand I needed to submerge the boiled potatoes into an ice water bath I thought just rinsing it would be fine lol. They wpuld have been much easier to dry, coat and fry cold but they came out great! Even with my misunderstanding about the ice bath. Were they delicious yes, were they crispy and soft YES, were they a hit with my family who consist of my husband and 3 picky boys also yes! Keeper of a recipe for sure thank you for sharing!

just drain the potatoes after refrigerating them for 10 minutes in soaked water, then add the cornstarch and deep fry. it'll be the same as this recipe. but you won't have to double fry or boil :>>
In case people don't realise, the mayonnaise is called Kewpie mayonnaise and has a very different flavour to whole egg mayo. It only uses egg yolks. It's Japanese and very creamy and delicious! In Australia we have it in most supermarkets, not just Asian ones. It's very popular here, nearly as popular as avocados:)
Boiling them and freezing them to use whenever is such a game changer, I never knew this!! Especially with frozen fries getting pricier where I live. Thank u so much for the recipe!

В чем сила крахмала, ведь мы сначала вымачиваем картофель чтобы удалить крахмал, а потом посыпаем крахмалом 🤷♀️ и ещё один вопрос: для чего два раза жарить? Если сразу обжарить, то картошка много масла впитает?
Вот я тоже голову ломала , и думаю ,когда вымачиваем ,за 30 минут крахмал выходит изнутри ,а когда обжариваем с крахмалом ,то это только для корочки сверху .
