      I hate sugar in my pancakes. My recipe is the same for 35 years … 2 1/2 cups flour, 3 tsps. baking powder, salt, 1 egg and milk. If I put sugar in my pancakes my family would mutiny.

      @@beckypage886 You gotta get the sweet from real 100% maple syrup. I think sugar in the cakes would be weird, unless it had something to do with browning them, and I don't see how.

      Hey john, no sugar for me (a dash of vanilla.) I also separate my eggs, whipping the whites into peaks than fold them into batter. Also, I cook them on bacon grease, much more flavorful.

    This is the way my grandmother made pancakes. She died when I was 28, I'm 74 now and can still see them and taste them in my mind. She was an amazing cook, miss you grandma.

      Mmmm...dad cooking. When she forgets how great you are when making pancakes .. switch to jelly filled sugar dusted crepes. That's what my dad did....when mom wasn't around.....and pancakes didn't provide the same god-worship response they used to.

    1 1/2 cups all-purpose flour
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1 tablespoon white sugar
    1 1/4 cups milk
    1 egg
    3 tablespoons butter, melted

      And two teaspoons of cinnamon sifted in with the dry ingredients if one should feel so inclined.
      And for a holiday edition, maybe even a half teaspoon of allspice ... or nutmeg.
      ...Or alternatively, one could stir the cinnamon, and/or the allspice, and/or the nutmeg into some honey and pour that over the pancakes in place of the maple syrup.
      ...Or, one could simply sprinkle one, two, or even all of those three spices on top just before taking your first bite.

    A little 1/2 to1 tsp of vanilla extract in the batter is way good, it really bumps up the flavor, yum!

    This was my great-grandfather's recipe, which I learned from my mother. Classic indeed. Great Granddad called them "dough gods", which I do too, because that's what they are.

    The nostalgia I get watching this now. I (German born and raised) Made this for my husband(American born and raised) when he lived in Germany 10 years ago. Ver possible that this was partially why he married me even though he said he never wanted to marry again. I think it made his day then and I can’t wait to make them again now. Good old chef John old fashioned pancakes. :-) ❤

    Just a couple quick tips, if you wipe the excess oil or butter out of the pan with a paper towel you leave enough behind that the pancakes don't stick, AND you get a more even golden browning instead of the patchy brown and white. Not only does it look better, it leaves a more uniform crust on the exterior of your fluffy breakfast.
    Also, don't be afraid to leave a few little lumps in your batter! Over mixing thins the batter and it has a more difficult time rising in the hot pan. A few lumps per pancake = fluffier pancakes and don't worry - they won't be floury, the lumps cook out perfectly.
    Who wants to come over for breakfast?

      The patchy brown is what makes them look like old fashioned. Just like my mother made. Everybody talks about fluffy pancakes but they’re too doughy in the middle. I guess people have different taste. This is a southern pancake.

      Was thinking the same thing. All these recipes I see on here seem to slightly overcook their pancakes. Slightly lower heat. Also, separating the whites and yolks, then beating the whites, and adding just before cooking will give you a much fluffier and lighter pancake. Everyone likes their own brand....

      I made some recently and can confirm that over-mixing the batter thins it out and makes a dense, rubbery pancake. Definitely want a somewhat lumpy batter on the thicker, dryer side.

      I apologize for too much information but, I’m a Grandma myself and I know some cheats.... In a Hurry? After you’ve made this recipe once or twice and are familiar with the desired consistency, try this... Take your pancake mix and mix according to directions... Then thin it down with milk until you achieve this consistency. Then melt about 3 TBSP of butter or bacon grease and dump that in your bowl along with 1 EGG ( beating the egg a bit before adding it helps) . Mix gently until combined, don’t want to develop the gluten. For the grand finale, fry in bacon grease for that crispy donut flavored edge. Or vege oil. ( butter is yummy but it burns too easily). While we want to avoid fats, a bit more oil in the pan (just a scant tsp);will give you that, Grandma made this just for you, crispy edge.

      Yes it brings back memories. My mom would be 97 now. She used to heat the bottle of maple syrup (just a bit), in a pan of water on stove. It was soooo good!

    Dear chef John, I made these and they were amazing. I did tweak them tho no melted butter into batter because of butter and maple syrup on top, and I substituted milk for buttermilk and added vanilla to the batter. Best pancakes I’ve ever made. Thank you for the foundation. I love your channel.!

    Made these tonight (Shrove Tuesday) and they are one of the best pancakes I have made. I normally just do the traditional British style but thought I would try something different and we all loved them. Now I just have to work out how to reheat the left over pancakes for tomorrows lunch as I tripled the recipe :)

    Pancakes from scratch has never been practiced in my family. My mother has always "preferred" to make pancakes from a box. Now that I am older, I am able to make pancakes from scratch, I've been trying recipes online, giving every kind of "old fashioned pancake" recipe a try, but none of them have turned out too well for me. This one takes the (pan) cake! Letting it sit for 5 minutes before cooking it seems to be what I've been missing all along. Glad I found this video, I make tasty pancakes from scratch now - even my mother likes it better than her usual "box" mix. Thank you!

    Cool! I found this (almost) exact recipe when my children were young in an old recipe book, around 20 years ago...the only difference was oil instead of butter, and the measurements are a bit different. They really are the best :)

      BaltazarSantiaqo While cayenne is excellent for heat, it is not good for flavor - I added too much cayenne to my beef jerky that I tried to make. It was almost hot enough but the cayenne flavor was all I could taste. I later learned that if I do that again, I'm to use extract of cayenne since it provides all the heat with none of the flavor...which should allow me to actually taste the beef next time. :D

    It was almost exactly what I ate some sixty years ago, which my aunts made for me. In those days, many American soldiers and their families were in Tokyo. Probably the recipe was from them. Of course, I made it and I love it. Thank you for the recipe.

    Recipe: 1 1/2 cups of all purpose flour
    3 tsp of baking powder
    1 tsp of salt
    2 tbsp of white sugar
    1 1/4 cups of milk
    1 egg
    3 tbsp melted unsalted butter
    Note: in his original recipe he added 3 1/2 tsp of baking powder, but I just think it was too much and he also added 1tbsp of white sugar instead of 2 tbsp, but feel free to make it your own way!

      I will try the 3 tsp of baking powder because I tasted it too strongly in the finished pancake. Can I use buttermilk? Would I take out the melted butter if I do nd just add a bit more buttermilk?

I am Swiss and we usually just mix milk, flower and egg..no baking powder and butter and they stay flat and kind of dense. So thanks a lot chef John, they taste so delicious! This will change my weekend breakfast culture. I was addicted to maple sirup before, but now I finally have the perfect match for it!

      I worked as a QC tech at a bakery that made pancakes for a major burger chain and I now add vanilla to my pancakes.
      Another secret is to pour the batter from at least ten to twelve inches (or more) above the pan, start low and raise as you pour, staying centered. This step will make your pancakes more evenly round and leave concentric rings on the presentation side of the pancake, making a more professional looking product.

      I also add cinnamon sometimes. Bananas too! The kids love it. In college, one of my roommates would add bacon bits and caramelized onions. It wasn't bad at all. What was bad, was that the other roommate would put ketchup on his pancakes, yuk, lol!

      GREEK MOUSSAKA
      INGREDIENTS (8-10 servings)
      4 large eggplants
      1 kg of lamb minced meat finely chopped
      1 small onion thinly chopped
      2 cloves gillyflower
      1 tablespoon of black raisins (optional)
      1 clove cinnamon
      ½ tablespoon grated orange peel
      2 tablespoons of olive oil
      1 ½ cup olive oil for frying
      1 teaspoon salt

      For the topping (option A)
      2 tablespoons butter
      3 - 4 tablespoons flour
      2 cups fresh milk
      2 egg yolks
      2 tablespoons grated cheese
      ½ teaspoon ground nutmeg
      For the topping (option B)
      ½ kg non sour yoghurt
      3 well beaten eggs
      1 tablespoon flour
      Salt
      Pepper
      Nutmeg (optional)
      METHOD
      Cut the eggplants into slices and put them in salted water for 1 hour approximately. Remove eggplants from water and squeeze them so they drain the excess water.
      Heat olive oil in a deep frying pan with heavy bottom and fry the eggplants until soften without getting brown. Arrange them on a kitchen towel paper to absorb the excess olive oil.
      In a clean frying pan heat olive oil and sizzle the onion until it golden browns without getting burned. Add minced meat, stir constantly, add all spices, grated orange peel and raisins- provided that you use them- along with a bit of salt. Cook 4 - 5 minutes until all fluids are absorbed.
      Arrange eggplant slices on a medium size baking dish, sprinkle minced meat and continue with another layer of eggplants.
      Prepare béchamel sauce as follows: In a small saucepan melt butter, remove from the heat and add flour, stirring constantly with a wooden ladle till the mixture thickens. When the mush cools, add the beaten egg yolks. Add cold milk and place the saucepan in the heat, in low temperature, stirring constantly till it becomes a thick and homogeneous sauce. Sprinkle cheese and add a touch of salt and nutmeg and spoon the sauce over all.
      Bake for 25-30 minutes in a preheated 180 degrees oven until the sauce golden browns. Served warm.

      Amber 180 There are many techniques, but i prefer doing it with my toaster. Just place the plate on top of the toaster and turn it on for a minute.

    I make a decent buttermilk pancake, always seems something was missing. Then I came across this video, stopped dead in my tracks...OMG these are my 'Grammies' pancakes from 65 years ago! Tears welled up in my eyes. I looked at the recipe and thought...yeah, my Grammy made great tasting simple foods...the pancakes are simple. NO rocket science needed here. My Grammy didn't use any rocket science for her great tasting foods....NO recipes needed either. Sometimes we'd eat them with tub butter and Turkey brand table syrup (before maple surple became in vogue) and sometimes we'd smear the butter on them and then a light sprinkle of salt. I remember eating 15-20 of these things at a sitting, specially when I returned from Vietnam in August of '67. Them were the good old days. Thanx for this video Chef John.

    After changing the measures to European (1 cup = 2,4 dl, etc.) and carefully measuring the dry ingredients by 'cutting' them over the edges of the measuring cups, I've always found I needed to add more milk to reach the desired consistency.
    So guys, look for how thick the batter is in this video rather than following the exact measures. If yours seems thicker, don't be afraid to add a little more milk until it 'feels right', like Chef John said.

    I'm so sad this reminds me of my father's homemade pancakes light and fluffy he used to make the big ones so we each had one and I don't know how he did it but the edges were crispy never burnt and delicious with at that time log cabin syrup. Now I use Grade A maple syrup. Awww the memories!

    I tried this recipe today and the pancakes were PHENOMENAL. I followed the exact measurements, however, instead of using 1 teaspoon of salt, I only used a tiny pinch of salt. Other than that, I followed the directions exactly as stated in the Website/Blog (Link in Description) and the pancakes were delicious. I will definitely make these pancakes again.

    These look so good. Everywhere I go (even that pancake chain) they make thick, undercooked pancakes that have a skin on the outside and are practically raw inside. No matter how much syrup you use they just sop it up like a sponge until you’re eating raw sponge cakes. These, on the other hand, look just like the amazing pancakes that my dad used to cook on Sunday morning when i was a kid.

    I made these just now and served them with whipped double cream, containing sugar and vanilla extract and poured over real Canadian Maple syrup. They were delicious! Thank you for sharing your recipe 👍 I need to make some more.

    This turned out great with one MAJOR adjustment. After 5 minutes rest the batter was too airy and thick to be used. I added a splash of milk, stirred gently and repeated until it could be poured. Not sure why every pancake recipe ever omits this vital step.

    I made these with the hash browns and it looked very good I was so ready to eat these but once I took a bite of the pancakes I almost vomited so I checked all the ingredients and everything looked good until I realized I accidentally added baking soda insted of baking powder 😂😂😭😭 that ruined my breakfast so I ended up just going to Mcdonalds for pancakes
