  • Anna makes a classic breakfast recipe. These light, fluffy blueberry pancakes will start your day right! Instructions below, makes 8 pancakes, or 4 servings.
    INGREDIENTS
    2 cups (150 g) all-purpose flour
    ¼ cup (50 g) granulated sugar
    2 tsp (6 g) baking powder
    ½ tsp (2.5 g) baking soda
    1 pinch salt
    1 ¾ cups (450 mL) buttermilk
    ¼ cup (60 mL) vegetable oil
    2 large eggs
    1 tsp (5 mL) finely grated lemon zest
    2 cups (250 g) fresh blueberries
    Butter, for greasing the pan
    Maple syrup, for serving
    DIRECTIONS
    1. In a large mixing bowl, sift the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the buttermilk, oil, eggs and lemon zest. Add this to the dry mixture and whisk just until blended, but a few lumps are still visible (this ensures you have not over-mixed the batter.)
    2. Preheat a griddle over medium-high heat and lightly grease the pan. Drop ladles of batter onto the skillet, fitting in as many as the pan fits without crowding. Sprinkle blueberries on top of each pancake, letting them sink gently into the batter without pressing. Cook the pancakes for 3-4 minutes, until bubbles begin to appear and the pancakes looks matte at the edges. Flip the pancakes and cook another 2-3 minutes before removing to a place. Continue until all of the batter has been used.
    3. Serve the pancakes immediately, with maple syrup.

      Really Cups in this time? How bout 1/10 of a stone? So I have to find out how much a cup is, then do 3/4 of it? Is it so hard to use pounds or kg?

    Just an FYI for those who work with grams and not cups, it's 250gr of flour and not 150 as stated in the description.

    Made these for breakfast. I didn't have buttermilk so added 2 tablespoons lemon juice & 1 tablespoon vinegar to milk and let sit at room temp for 20 minutes and it was perfect, Used sliced bananas & brown sugar instead of blueberries and they were fluffy and delicious, Ty so much for the recipe!

      Vinegar in milk ? And was perfect? Even buttermilk will split the milk if kept for some time. For vinegar, it will be immediate

    My first pancake turns out amazing. AND I let the mixture sit for 15 min or so...makes it even better. Never over mix. And after it sits, just give it a very light gentle stir.

    I use frozen blueberries that come in the packet because it tastes better in pancakes than fresh blueberries.

    Please note, if you're following the recipe by weight (in grams)-- 2 Cups is not equal to 150 grams. I'm used to the conversion 125g = 1 C flour. I started with just 150g as printed, but it created a soupy mess that made 1/16th inch pancakes. After I added about 50-75g more of flour, they were PERFECT. Actually, the best pancake structure and flavor I've ever made.

    Finally got baking powder and actually made these!!! Didn’t have buttermilk but I did the milk+lemon juice and they turned out really good, super fluffy 😋 I’m very picky with pancakes but these passed the test 👍🏼👍🏼

    I generally microwave butter in my glass measuring cup for about 20 seconds (semi-liquid butter), and when the pancakes are done, drizzle the microwaved butter on each one of them, then add syrup in between each pancake, and on top

    Absolutely delicious! It took indeed a couple of tries, but then they came out great; even when using the incorrect measurement of 150 grs. of flour instead of 250 as pointed out in several other comments.
    Two tips:
    - I started with a cheap "non-stick" pan. The results were horrible and not presentable.
    I decided to switch to the oldfashioned cast iron skillet instead, which worked way better.
    - once you drop in the batter, do not move the pan until the first side is done!
    Moving the pan will not make the pancakes easier to detach from the surface. Quite the contrary!
    Be patient and wait until the edges lose their shine and little bubbles have formed at the surface.
    If the first side is properly done, they will come loose almost without any effort.
    After practising for a while, I coukd get them loose with just 1 or 2 firm shakes of the pan.
    If you really need to work the spatula to get them loose, you should probably have left them for another couple of minutes.

    My family favorite. Gosh it so so so good and delicious. I use cake flour instead of all purpose. I do the same for her waffles 🧇 recipe , if I am out of cake flour I do with bread flour . These two recipes turns out darn good every time. 🫶🏻

    I just made these, they turned out great! I didn't add blueberries as I don't have any. Nice and fluffy with a good flavour from the buttermilk. The batter made about 12 pancakes, each were 1/3 cup measured.

    I like to make pancake from scratch on sundays, so that it beca e a tradition since I like to try diff recipes, combinaron, etc., and my hubby is pretty much my guinea pig. I am also a fan of Ana. I have no clue how is it that this recipe slipped!!!! I did this today, for valentine's breakfast... These are delicious and moist! The batter turned more runny to me than the video, so, pancake were linda thin but raised nicely, and are not too sweet. Will for sure keep this recipe at hand! Thanks Anna!

    I lôve adding small bits of apple in batter and blueberries the way she does
    Apple makes cakes moist and more flavorful!
    PS: this is best pancake batter I’ve tried out of many including boxed and moms. Maybe sifting is key. I did use 1c buttermilk instead of 3/4 c, coconut oil on hand in place of veggie oil, Also used tiny chopped bits of 1 lg. apple and the same amt blueberries.

    An observation, the conversion to grams on the description box should say 300 grs of flour instead of 150 because thats the real conversion for 2 cups of flour. Great recipe!

    Butter actually makes the browning less even, not more so. You never want pools of fat on the pan. Heat the griddle until a drop of water dances when dropped on it, barely grease with a paper towel dipped in oil and don’t grease again until you are done or something sticks. Also, if it’s taking 4 minutes on the first side, your pan is not hot enough.

    Quick question: Can you use regular milk in the same proportion as you use buttermilk? I live alone, and buying buttermilk usually means whatever I don't use for my pancakes spoils and goes to waste. Thanks! EDIT: Okay you answered this later in the video. Can I omit the lemon juice? Not a huge fan of tartness in my pancakes.

    the measurements in grams are a bit off. 2 cups of flour are 220 - 250 grams, depending on the type of flour you're using. in case your pancake batter turns out to be liquidy...

    Wow Anna, your recipes are so awesome. Your commentary is also to the point and informative! I prefer not to mix eggs and milk together and therefore use water as an alternative.
