    I'm starting to do freezer meals again because I suffer from depression. My daughter is okay eating ramen on my down days but I want her to eat healthier foods. On my good days I prep for "just in case".

      I finally broke out of a long-standing depression spell and have spent the last few days cooking up a storm for the same reason. (I want to eat healthier)

      You won't regret it! I did a bunch of meals before my daughter was born and it was a life saver. I'm due in 2 months with baby #2 and I have made TRIPLE the amount of freezer meals I made before because I loved having so many things to just stick into the oven or microwave on days when nothing went right and I was exhausted! It's so so worth it. If you haven't already, make some cookies to keep in the freezer 🍪🍪

      @@hayleeperez3486 I've made a couple lasagnas, 4 shepherd's pies, chicken and dumplings, beef tips, a few different types of stew, chili, a couple soups, breakfast burritos, and bean and cheese burritos. Those all freeze well and are good comfort food type of meals. I made a bunch of lactation cookies too, and I definitely noticed a huge difference in milk production when I ate them regularly. I think I used the recipe on the Simply Real Moms blog for chocolate chip lactation cookies, which call for oats, flax, and brewer's yeast to help milk supply. I changed the recipe a little bit to suit my tastes and added extra flax and some other things, but it's a good recipe to start with if you're not sure what kind you're wanting to make!

    Easy fajitas:
    Slice 1# beef thin, 1jar pace picante salsa, 1 4oz can diced green Chiles, 1 packet of taco seasoning cook on high for 3 hours.

    I have multiple chronic illnesses. I put together freezer meals when I'm feeling good and things aren't flaring so that when I'm down and non functional, there's an easy hot meal for me and my family. It's a good strategy and I'm eager to try these variantions on nummy recipes!

      I'm in a similar situation with chronic illness. I batch cook when I'm having good days too so during flares or on busy work days when I'm too fatigued to have a shower let alone cook a meal I can have something tasty and healthy to hand. I'd be lost without my freezer!

    I LOVE how you actually show how you put meals together and which ingredients you use! I cook dang near every meal - breakfast, lunch and dinner for my three boys and I have to plan or I will end up in the drive through. Keep it comin!

    If you oil or use non stick spray on the cup before measuring honey or other thick, sticky stuff it comes out easily.
    I'm going to try a few of those. Thanks for showing them.

      Wow! Thanks for that tip! This never occurred to me... water after oils to help wash it out did but I never would have thought to pre spray for sticky stuff!

    The reason I do freezer meals is because my mom loves Sweet and Sour Chicken (I don't) and it is a pain to make so I make several and put it in the freezer. I also bulk make meatballs so I only get dirty and have to clean up once.

    I made a ton of freezer meal this summer right before I had my son so I wouldn’t have to worry about cooking while recovering from my 4th c-section. They would have worked out great if almost all of them didn’t need to be cooked in the oven and if the weather hadn’t spiked up into the high 90’s the day I had my son. 🤦‍♀️ For the most part I just make double when making things like spaghetti sauce, refried beans, chicken broccoli rice, chili or anything else that freezes well. Hope you and Dave have a great vacation!

      Jessica Vogan we invested in an air fryer that is also a toaster oven and can act as a mini oven and it’s perfect for summer cooking. If your cooking for a family it might take longer just because you can’t fit a big pan in it and you’d need to do multiple batches cooking but it’s worth it to not have to heat up the house

    I usually do half prep on Sunday afternoons. I work full time, and my husband is a (picky) diabetic, so it's important for us to make inexpensive meals..but also healthy. I pack his lunch every evening. Half prep being I chop all the vegetables and precook meats.

    Great ideas. I dont usually prep freezer meals.
    I do make my meaty pasta sauce once a month and freeze to have once a week. I also make big batches of stuff and freeze for a later time.
    I like to use freezer meals when you just need a break from cooking. We live about an hour away from anyplace we would go out to eat at.
    I want to start browning big batches of ground beef and freezing in 1-2lb packages to be ready for a true dump and go crockpot meal.

    I wish I had a big enough freezer for freezer meals 😭😭😭😭😭😭 mine is tiny. There's 4 of us (2, 2 and under) and our freezer is always packed. Same with the fridge because that's also small. Pretty frustrating!

      Holly Long I understand!! A couple of years ago we bought a deep freezer because we wanted to be able to stock up on meats to save money and create freezer meals. We used our tax money to do it. Maybe you’ll be able to use some of your tax money for that this year.

      If you’ve got room for any kind of deep freezer or chest freezer it’s worth it and a must have like I’d rather have freezer space than my microwave 😂

    Little trick I learned for crockpots if your gonna do a cornbread with a soup in the crockpot especially if it’s got a little too much liquid is to mix up the cornbread batter and pour it right onto the top of your finished soup about 45 mins before you serve it and the cornbread soaks up some of the soup liquid

    I use freezer meals for about half our meals. It helps a lot with a toddler, working, and college especially whenever my SO is out of town for work. The week prior to him leaving for a long while I double batch a lot of meals I cook, and also do a big session of freezer meal prep. I also do freezer meal prep for my in laws when I can to help them out.

    I just put together 3 freezer meals this weekend. I feel /so/ accomplished. I made your Mexican lasagna as one.
    I like them for when we're busy, or I can't be assed to cook. Then when my husband asks what I think about for dinner, I can just point him to the freezer and continue to be a potato.
    I'm tackling the pesto meatballs tonight, probably going to have some of them tonight with dinner, freeze the rest. Super excited for that too. I made your no knead bread dough last night, hopefully I bake it properly today, then we can have spaghetti and crunchy bread.
    Clearly you've inspired me to go back to food prep, so thanks for that.

    I love keeping 5-15 freezer meals in the... well... the freezer! But I don't normally have days when I make freezer meals. We are a family of 3, so it's pretty easy to just make a double batch of something and put a meal (or 2) in the freezer. Easy things I freeze are hamburger patties, poor man's steak with mushroom gravy, enchiladas, pulled pork, shepherd's pie... I also like to marinade a bunch of steaks, lightly grill them, bag them in meal portions, then when I want to use them I bake them for 30 min. They are so delicious and easy! I will occasionally assemble a bunch of chimichangas or pizzas as well.
    I like to use freezer meals when I am sick or recovering from being sick.... which has happened way too often the last while in my opinion. Having them on hand makes it easier for me to feel free to go help a friend last minute, and still be able to serve a home cooked meal to my family. They are also handy for sharing with friends who just need a boost.

    I have three words for you when it comes to freezer meals, Six Sisters Stuff. I have been using several of their recipes for freezer meals for the last several months. I love to have them in my freezer and ready to be made so that we can have healthy meals fast anytime. I love that my kids or husband can quickly make them on nights that I’m not home, or when I’m home and don’t have a lot of time or energy to make something. Making freezer meals also comes in handy if you find a bulk deal that is too good to pass up. A few weeks ago I found boneless skinless chicken at my store in a 40lb box for .98 cents a pound. I felt confident I could get the box and not just freeze it, but, put it into meals that could be prepared quickly and easily. I love that I was able put them together when I found that amazing deal! I also know I am more likely to use it since I can just pop it into a meal plan, then set it and almost forget it, since it goes in a crockpot or instant pot. If I’d put it in the freezer as just chicken I know I have less chance of working up my enthusiasm to actually get it out and making it up. If that makes sense.     I can't wait to make those sesame honey chicken lettuce cups! I love freezer meals because I have Lupus and I never know when a bad day will hit, if I have a healthy yummy freezer dinner ready to go it really is a huge lifesaver on those rough days.     My kids love bbq chicken sliders. A poundish of chicken breasts and bbq sauce (I make my own but you don’t have to) in the slow cooker. Cook all day, shred, and serve on Hawaiian rolls (the small ones). So good.

    My version of freezer meals- I cook the dinner and freeze the leftovers in single serving amounts (quart size freezer bag). Then I can reheat the amount I need for lunch or dinner later.

    I like to use them whenever I have a busy day or I am just tired is cooking, like instead of going out to eat I can still fix a dinner at home but I didn’t have to cook. I would totally use paper plates too so very little clean up.

    I HAVE to try the tortellini bake and the fajitas ...they sound delicious!I use freezer meals more than I used too with only 3 of us left at home (it used to be 7)🤣 so now I still make the regular full size recipes but freeze half in small foil pans or ziplocks for easy meals later. I also can grab some to take to my 80+ yrs folks when I visit them to make some easy meals for them.

    Really any kind of soup or stew is perfect freeze ahead and dump in a crockpot territory especially if it’s a soup or stew you doubled

    Hi, not sure if you have a video about it already but could you do an explainer video about HOW to properly wrap and freeze foods and maybe some rules of thumb you follow about when you need to take things out by. These might be obvious to others but I have no idea where to start!

    I have figured out that my family loves homemade breakfast bowls and because of this virus I’m doing college from home so I like to do freezer meals to freeze large meals so that they don’t waste such as my chili, veggie soup, 15 bean soup etc. and individual servings of homemade breakfast bowls. All I do is cut up some potatoes real small and roast them with a little tiny drizzle of oil and some light seasoning, dice up some cooked bacon or fry some ground sausage up into real small pieces, scramble some eggs with some of the same seasoning from the eggs and throw some cheese in with the eggs when I mix them before they cook then throw everything into my containers or ziplock bags in individual servings with some more cheese on top. This can also be a filling for a breakfast burrito. When time to serve all I do is heat it up in the microwave. Sometimes it is also used for work breakfasts because my father goes into work so early that he eats breakfast and lunch there. The supper freezer meals are used for busy days so that all we gotta do is dump into a crockpot and forget about it

    My mom had a really quick and easy recipe she always just called “casserole.“ Not any TYPE of casserole, ... just “Casserole.” 😳 🙄
    It was basically:
    one Campbell’s Soup can of Tomato (or Cream of Tomato?) soup, plus
    1 pound of (lean) ground beef scrambled on the stovetop in a skillet till browned, plus
    a bunch of white russet potatoes (5 or 6 to 8 large ones?) cut into large bite-size chunks, (she usually peeled them, or you could just scrub them and leave the peels on for extra flavor & nutrition), (most of the vitamins in Russet potatoes, including vitamin C(!) is in the peel(!!), and the Campbell’s Soup can (amount) full of (regular) cow’s milk. (She used whole milk when I was growing up, but today I use 2%.)
    That was it!!
    After you scrambled the meat in a skillet on the stove top, you would just pour everything together into a Pyrex or Corning Ware 13”x9” casserole dish and put it in the oven for... about... (?) 30 to 55 (or so?) 🤷‍♀️ minutes long at 350°F to 375°F or 400°F(?), (more or less??) 🤷‍♀️🤷‍♀️ (Of course, the higher temperature will cook faster.)
    You could cover it with foil, loosely tenting it, and punch a few holes in it with a fork to vent steam out of it.
    Just till it was warm and bubbly and the potatoes are cooked through completely, till they’re soft, but you could also pre-boil the potatoes in a pot of lightly salted water first, the way you would do them for mashed potatoes, but not cook them for too long, so they’re too soft. (Do that WHIKE you’re scrambling the meat in the skillet.)
    You want them a little bit firm still. Drain them, then add to the casserole dish, mixing everything together.
    An option would be to also add some peas and carrots (fresh, canned, or frozen, doesn’t matter), to the dish, (but it’s not vital.) Also canned yellow Kernel corn is another option. (Or broccoli florets, if your family likes that??)
    You could also add a little bit of onion if you want, either fresh sweet (yellow) Vidalia or white onion, diced, or some dry minced onion, like maybe a tablespoon or so? 🤷‍♀️
    And then put a pinch or two of dried parsley on top, to garnish a little. (Also not vital, but it’s a nice touch on top.) 👍❤️😉
    After it cooks covered, uncover it and bake for about 5 to 10 minutes more(?), to get the top to brown a little bit, but watch it, so it doesn’t brown too much!!!! 😳🙄😲😱🤯
    The whole thing really doesn’t take very long to make.
    Instead of fresh potatoes, you could also use some canned white potatoes 🥔 instead, (either sliced, or diced or whole), and just cut the whole ones up a little bit to large bite sized. (Canned potatoes would cut down on baking time by at least half!!)
    Actually I’m falling in LOVE with having canned white potatoes in my pantry!! Now I don’t have a 5 or 10 pound sack of potatoes that rots in my kitchen anymore, because I didn’t use them up in time!!
    I keep several cans of canned white potatoes in my pantry now, (whole, diced, AND sliced!!!), and I can use them to make a “homemade” chicken pot pie 🥧 in an 8”inch or 9” inch pie pan, the way you would make an apple pie from scratch. (I also keep a couple of larger cans of Swanson canned white chicken meat, found next to the tuna cans in the grocery store for easy chicken pot pies!)
    BONUS TIP! 👍❤️😍😋
    Except I like using the Pillsbury ready-made crusts to make the pies quick and easy!! 👍❤️❤️❤️❤️😍😘🥰
    Pillsbury ready made crusts freeze VERY well, but cheap, generic store brands DO NOT FREEZE 🥶 WELL!!!! 😞😒

      After you scramble the ground beef, you can make in about 15 to 20 minutes or so, unless you just want to cook it in the oven longer.
      But if you have the meat already scrambled, and you use canned white potatoes, it won’t take as long in the oven.

      Donna Norris oh sad day. My oven is not working and we’re in the process of getting a new one. I’ve been using my toaster oven. Maybe I can make a small batch and fit my 9x9 Pam in there. I’ve baked using that size in the toaster oven and the food came out great! Thanks 😊

    Hey, it's easier to shake the bag with meat and corn starch (or whatever breading you may be using) if you leave air in the bag! Gives it space to move around (: def gonna make some of these recipes. (:

    I want to start doing freezer meals for those days when I'm just too tired to cook or won't be home till late and need to cut down on prep time. I'm hoping that this will help keep me from taking the fam to eat out all the time. I'm for sure going to try the beef and broccoli recipe and that tortellini dish.
