I think I use the traditional chords, but I add some b2's and b3's (diminished), and I get out of key to the relative major or minor, depending on how the preacher is preaching. I also do chromatic chords holding the one on top.
As far as backing up a preacher is concerned it depends a lot of times I will go to the one, three, four, diminish, sometimes I will do a passing cord to the five. And repeat until I go. Back to the One

Another thing I do is follow the preacher's voice with the run they do or something similar. I'm sure everyone does that, though.
