i used the screen glue remover tool to easily getting rid the remain adhesive..faster and easier..maybe you can try this too because manually removing the adhesive using knife etc. is quite a hassle to be honest XD

what is the white thing you put on the NAND before you install it and what does it do?
I think it's like flux pulver, but I'm not sure. I also would like to know.

You dont grind off the NAND you desolder it grinding it off will mess up the motherboard
They grind it off because the heat from desoldering the NAND may affect the solder on other components nearby
