I only ever heard of it back in the mid-2000s, when Gordon Brown said it was his favourite dish, and a magazine did some recipe about it, comparing it to colcannon and bubble & squeak. Cuisine's a fascinating thing - across the world, you'll find some variation of bubble & squeak/rumbledethumps in some form or another. Ethiopia has a delicious dish that's similar called Atakilt Wat, in India, they have saag aloo.

I do a 'Christmas dinner' rumbledethump on Boxing Day. Leftover roast potatoes, all of the brussel sprouts that people refused to eat; roasted carrots, parsnips, stuffing, bit of turkey. Chop it all up in the magimix. Season and form into a pattie and fry them. Serve with slices of turkey. They all love it!

I love the simplicity of this dish. It reminds me so much of the way my grandmother cooked. She was Spanish so different ingredients but same down wit earth cooking.

I was thinking about trying the same thing myself, but not all of my family likes the stuff. Perhaps will mix it in with half of the veggies and place on one side of the dish, and put the rest of the plain veggies on the other side. That way everyone gets a version they like.
I’ve been vegetarian all my life and my dad would make us bubble and squeak. It was his specialty hehe. It had all the leftovers minus meat of course. He would fry it in a frying pan though. Yummy!

I have introduced my young niece (who is not Scottish) to Rumbledethumps and now it's her favorite way to have potatoes. It's so yummy. Thanks for this recipe which incorporates ham to make it more of a main dish. I will try that next time I make it.
Looks very tasty, and quick! Kinda reminds me of how my mom makes "Labskaus" wich is a typical Northern German recipe. Find chopped onions are roasted with canned beef, for example Roastbeef in Butter until everything gets nice and browned. Then she adds it to mashed potatoes spiced with some salt pepper and nutmeg and some cream or milk. Traditionally tender cooked red beet is chopped up added (we use the Glas version) wich gives it a nice pink color to the potatoes. Some add pickles to, or just serve them with, and then it's nice to make a lillte "mountain" of Labskaus on the plate, and top it of with a fried egg. Some eat sour-Hering with it, but since Labskaus was traditionally a dish for fishermen, they where quite glad to have something other then fish on the menu lol.
I’ve always loved me bubble and squeak which goes beautifully with some cold sliced roast. This recipe gives me more scope to make a similar but different meal. I’m going to try this within the week because it’s perfect for the foul weather we in Toronto are experiencing right now. This is what I would call a “home and hearth” meal. Thanks for sharing this. Cover and stir to make sure the cabbage gets cooked. A crusty loaf of bread and you have a meal. I bet the beets would be delicious with it.

Memories! When I was a youngster Mum would make this from the leftovers from Sunday Lunch and it was delicious! You’ve inspired me to make it!

This dish is so good. It's quick easy. Affordable and comfort food to the Max. I've eaten it every night this week.
I know this will make some people howl but, I'm going to try this using vegetarian mince. I reckon it'll work well.
