    Hello Folks!
    I hope I find you all well. So today I made a wonderful pot of Scotch Broth…this time I’ve used chicken as a base and meat but mutton is more commonly used in this type of soup. It’s really tasty and perfect with a big hunk of crusty bread on the side :)
    Everything I used will be listed below.

    Everything I used - You’ll need a BIG soup pot.
    * 300g (10.5oz) Potatoes - Peeled and diced
    * 300g (10.5oz) Carrots - Peeled and diced
    * 300g (10.5oz ) Swede or Turnip - Peeled and diced
    * 200g (7oz) Onions - Peeled and diced
    * 30g (1oz) Fresh chopped parsley
    * 200g (7oz) Pearl barley
    * 1 Whole chicken (around 4lbs/2kg in weight)
    * 2 Chicken stock pots or 3-4 Chicken stock cubes
    * 1 Teaspoon salt
    * 3 Bay leaves (optional)
    * Olive or vegetable oil for frying

    My DNA is probably 50% Scotch Broth (mutton), Cock-a-leekie, Lentil and Ham broth, and Beef and Barley Broth. My mum and dad fed a family of seven of us on huge pots of soup with loads of bread. I can’t imagine my life without these deeply comforting and satisfying soups

    My mother made the stock from a bone. We would walk out of our area, my mother would call into a butchers "Do you have a bone for the dog." At that time we didn't have a dog. If it was for the dog they gave it to you for free. For soup they charged you tuppence.

    Before I even start the video, that looks so good. It's still crisp here even though we had some sunshine this week, today is great and it was raining last night. Chicken soup with carrots and it never sounds bad!

    I have Covid and 2 of my kids and this is exactly what we need ! Making it right now but using Irish ( broth ) soup mix that includes yellow and green split peas ,red lentils and blue peas. Such a great healthy soup for when you are under the weather like you say ! Thank you for this great video 😊

    Theres nothing like home made soup and this looks wonderful. I often make a quick pan of leak and tattie soup for lunch as it's so quick and easy to do. Would love to try this one some time.

    “Be warned, you’ll be able to hang your wallpaper with it”…You are such a delight!😂 We are due for a lot of rain this week, plus my mom just got out of the hospital, so I’m definitely going to thaw my chicken now to make this for her.     that's really similar to how I make it. one thing I do differently as I like it a little thicker is to drag out a couple of ladles and blend them to a pulp before popping it back in the pan.

    This looks so delicious!! Mutton is unheard of here in the US except at Mideast and Africam markets. I don't think I have ever had it. I am glad you have a chicken version. My husband would love this! Thanks for sharing!!

      Beef probably a more common substitute for mutton than chicken.

    Yummy. I am going to make this over the weekend. Stewing chickens are on sale at my local store. I am in the US and my favorite stock concentrate is from Kitchen Accomplice. It is about the thickness of ketchup and comes in an 8oz. squeeze bottle so I can squeeze more or less, depending on how much I need. They have a low sodium version that is excellent. I keep beef, chicken, and veggie versions on hand.

    Love this soup , if you also have a cold and want to spice it up a bit to help clear your sinuses add some red pepper flakes or cayenne pepper , works a treat, delicious, btw this is almost the same as Chicken Noodle Soup in the U.S. instead of the pearl barley you add egg noodles and a bit of milk at the end, both amazing. 💖💖👍👍

    Have you tried a seasoning powder called Vegeta? It's lovely for adding a bit of something-something to soups. For beef soups I like to use Maggi liquid, a little dash does a lot.

    TKS for the video. I am Asian married to Scottish for 22yrs. We settled down in borneo and my husband missed his Scottish broth. I used to buy his can of Scottish broth from. Supermarket. Not only the price was so expensive compared to UK, but now, hardly get any more from the supermarket after covid. pandemic.. I will give it a go and see if he like it. Hopefully he will find it similar to what he has from UK.

    OMG this looks delicious! Reminds me of my family's Acadian Chicken Fricot.
    1 whole chicken approx 3 lbs, skin removed and chopped into pieces
    approx 10 cups of water
    2 large onions chopped
    6 large potatoes, peeled and cubed
    2-3 large carrots, peeled and sliced
    salt and pepper to taste
    1-2 Tbs summer savory (this is what gives it the flavor, but not sure if it's available outside of Atlantic Canada)
    Dumplings
    1 cup flour
    1 tsp salt
    1 Tbs baking powder
    1/2 cup or more cold water*
    We always just put the chicken, onions, potatoes, carrots and seasonings into the pot and add the water and boil it all together. I know it's probably not the *right* way to do it, but it's how we've always cooked it. Obviously if your chicken pieces are big and have the bones in, you may need to start them first.
    It will cook for anywhere between 30 minutes and an hour total, again depends on the size of the chicken and the vegetables. Lately I use boneless, skinless chicken that I cut into bite size pieces and I cut my vegetables into bite size pieces and cook it all together. The broth isn't as rich with boneless chicken so you could always add some bouillon or stock pots or whatever to add in that extra richness. Some people sauté the onions in butter first, which would add a richness, but I'm far too lazy for that.
    In a bowl mix your dumpling dry ingredients. slowly stir in the cold water until it is just combined and forms a very loose dough. You will drop this by spoonful's into the stew/fricot. This next part is crucial, work fast, then once they are all in, cover the pot with a lid and let sit for 7 minutes on low-medium to low heat. you want it to simmer but not boil. Do not peek for the 7 minutes.
    Some people add celery and some even put in some turnip or what you call swede into their fricot, but our recipe never had those. For the dumplings, some people make them different with butter and milk, but this was the basic way my late grandmother made them. They were poor and adding butter and milk weren't easily available. My mom is the youngest of 11 kids, so they needed to make their food stretch and do so as cheaply as possible.

    That looks delicious.cheryl. I'm.definately gonna give this 1 a go. Hubby not keen.on pearl barley but I'm.sure he's gonna love this. And like the idea of having chicken rolls with it as well. And lots of leftovers to freeze as well. Another great recipe

    I got such a pang of nostalgia from this because we ate it growing up in Newcastle as well. She'd add soft dumplings too that she'd call clooty (not like sweet scottish ones). You've inspired me to make this this weekend thank you!

    Looks like the "stock pots" aren't easily available in the US. I was able to find an ingredients list for them - all good, except that it lists rosemary, which sadly I am allergic to. But that makes me feel better about making this lovely recipe with the stock base I do have, so there's my silver lining! Thanks for posting this video and the recipe details! 🙂
    UPDATE: I made this soup over the weekend - lovely! I added celery and a bay leaf (LOL, my motto is "Everything's better with bay leaf!") and yum! Tasty!

    Mmmmm 😋, my favourite a steaming bowl of hearty chicken soup 🍲 it looks absolutely delicious Cheryl. I normally make mine pretty much following the same ingredients but with the inclusion of some ribs of celery, a leak & normally use rice, but will try making it with pearl barley the next time at your recommendation.     Try roasting the chicken first. Get your roast chicken meal and the left overs go Inti he stock pot. Will add more flavour. In the old days was the leftover Sunday roast that would make the soup stock base on the Monday and soup for at least 2 days….

    Over here in northern Ireland we have a similar recipe called vegetable broth made the same way with the same ingredients only we add more vegetables,leeks, parsnips celery we also add soup mix which is barley lentils split peas
    Yours also looked delicious

    ooo this sounds delicious 😋 I'll definitely be giving this a go 😊 The last 3 days we've been having bacon and lentil soup for lunch - one of your recipes I copied down aaages ago and have made a few times now. Even took the time to work out the cost and it worked out as less than 50p per portion (trying to save money at the mo)😁

    It isn't really Scotch Broth if made with anything other than mutton....however, it certainly is a wonderful twist on chicken soup, and it does look marvelous....now that'll stick to your ribs as good as the Scotch Broth!!..Two thumbs up!!

    This looks amazing! I've made chicken soup but never with using the whole chicken to make a the stock, so I definitely want to give this a go. Do you have to do anything to prep the chicken first? I don't really cook with chicken very much because I get so concerned about the prep and making sure it's cooked enough, so any tips people have would be much appreciated!

    Broth always sounds very angry terminology but soup is soothing! (also Pearl Barley is very good if your vehicle gets stuck in the Snow also as you can pop it under your wheels)

    I live south of stonehaven so i was looking for a Scottish soup that I know, I saw the name and wondered if it’s the ‘what’s for tea’ farm shops near me. My carer & I cooked the chicken, she chopped veg and we put it in the stock overnight for me to cook the next day. Unfortunately I could only get broth mix which said overnight, away to start cooking but as it’s in the stock will it be okay to boil abit longer rather than softening the veg? I’m looking forward to enjoying this and freezing sone for when I get snowed in. Can’t wait to look at your other recipes 😊
