Great content. You cannot go wrong with running extra lumberjacks in the winter. I pull off farm workers and throw them in a woodcutters shed for the winter for the extra firewood. Works well. They will eventually build skill in both farm and extraction.
When you are missing workers the cause is usually that they are gone on maternity leave. You have 18/18 workers out of 33 total people, so there's nobody idle but you have 14 children and mothers.
Dont sell the clay - once you get bees you'll need it for mead bottles. Then with the tavern you can make mead and wine...Mead sells for a lot at the merchant stalls or just in general.

i feel like you should equalize the work between the excavation shed and mine. or move one person to the mine and have the excavation shed set for just stone and limestone. otherwise i feel like your not optimizing the mine and shed as well as it could be
clay is useful at the herbalist, used to make potion bottles as well as clay bowls for cooking. Just an FYI. Out of curiosity, why do you have the half finished fishing docks? Are they for decorative purposes?

bro, it kills me every time you make bronze tools for your guys. the quality doesnt seem to matter at all. they use stone tools and iron tools at the same rate. its not right, but it seems to be the way the game works right now

You need to build the builders hut so that the worker assigned there can be told to do all repairs on buildings

Plum-Wine sells for way more than mead. But you need orchards for that. Big ones. So bees might actually be a good idea. Maybe both?

Rugs and curtains plus shelves. The peasants love them.
You can craft firewood on you in the tools wheel. If you have the wood then you do not need to go to our woodshed.
