Кто не понял: это специальная тёрка (рубанок) для сругания кацуобуси - солёно-вялено-сушеного тунца, доведённого до состояния деревяшки. Эта рыбная стружка используется повсеместно в японской кухне, от классического бульона до обсыпки суши.

I love this. I love it. And fresh-shaved has a whole different flavor. There's no comparing the two, between prepackaged and fresh-shaved. Even mediocre-quality bonito can taste better if hand shaved like this.
In these videos, the automatic translation is an adventure in itself. In Swedish, the title says "the finest Japanese electric razor". ("rakapparat"). I had somewhat different expectations! 🙂

1 Wooden Box: The shaver typically consists of a wooden box with a drawer at the bottom to catch the shavings.
2 Blade: A sharp, adjustable blade is mounted on top of the box. The angle and height of the blade can be adjusted to control the thickness of the shavings.
3 Lid: A lid covers the blade when the shaver is not in use.

Не очень понятно, как регулируется рубанок. Только забиванием ножа? А если нужно менять толщину снятия?
Так и регулируется. Все рубанки были подобными ранее. Толщина варьируется от полупрозрачной стружки до той что не под физ усилия будет то есть весьма толстой. Японский рубанок хорош своим углом атаки. Самая чистая поверхность после. Усилия реза так же минимальны в отличии от европейских.
@@nikadmin1244 понятно. По большому счету, получается рубанок, настроенный на определенную толщину. Каждый раз стучать и елозить по деревянному корпусу не айс, жизни ему не добавит. Но, вероятно, у профи на каждый случай свой отстроенный рубанок.
@@valshu7644 Живут десятилетиями. Один раз до след подстройки на нужную толщину стружки или заточки нужно отрегулировать. Бук древесина прочная, твёрдая. При износе сильном постельки делается просто вклейка или ставится другой нож. Нож на данных рубанках всегда имеет форму клина. Один корпус обычно служит до полного срабатывания(стачивания) ножа. Да, верно замечено что рубанков много не бывает. Они довольно дешевые в производстве, изготовлении. Дома можно сделать имея сноровку и понимание как. А понимание предоставит масса подробных видео с пояснениями как что куда и как. Обучался делать рубанки и клинки японские когда ютуба не было. Журналы выписываемые решали. Как и книги.

Genuine craftsmanship results in better products, better made for a wider market and to a greater benefit for the workforce. For "prestigious" substitute "exploitative".
