Hi Sadie, it siezes with the addition of water because cocoa solids are a hoe for water, leaving poor old cocoa fat behind and breaking the consistency but overheating can also seize chocolate! I'm not quite sure the mechanism but it really does.
Gwynne Virts usually seizing is basically burning in chocolate world, its hard to incorporate and emulsify a liquid into a seized chocolate but of course you can try
michael scott I am no chocolate expert, but in my career I’ve only ever had chocolate seize on me once and it was because of moisture on a spoon I used to stir the chocolate I was melting.
@@sjenkins1057 I think that person was just making a comparison, not saying that seizing = burning. Seizing is comparable to burning because they're both endgames in cooking.

I thought chocolate seizes when it is heated at too high of a temperature?
@@sadiesadie6343 yes but the water thing is different and when it happens there is no turning back. Even a little bit of water on the spoon can ruin the dish
@@simonbarth110 good to know! Thanks!
Hi Sadie, it siezes with the addition of water because cocoa solids are a hoe for water, leaving poor old cocoa fat behind and breaking the consistency but overheating can also seize chocolate! I'm not quite sure the mechanism but it really does.
@@macybautista1301 that's true and from that there's virtually no turning back, but sometimes adding flavorless oils will help
I love how they made chris so big on the thumbnail LOL
If your chocolate seizes, make ganache. It has seized because there isn’t enough liquid to suspend the solids in the chocolate.
@@michaelscott-wx7ww What you are describing is actually scorching, not seizing. And scorching is pretty much unrecoverable.
@@sjenkins1057 I think that person was just making a comparison, not saying that seizing = burning. Seizing is comparable to burning because they're both endgames in cooking.
Gwynne Virts yes any moisture added to chocolate while melting can be detrimental, its why the double boiler method is preferred to just straight into the pan melting as a precaution ! :)
Brad: no.
Priya: yes
Brad and Priya: love the lumps
“ is there a way to remove baked good if they are stuck to the pan”
Brad: CLAIRE
I feel like with every “No!” the Desi in Priya wants to ask Brad if he knows how many people don’t have food in the world 😂😂
I still remember my mom going "there are starving children in Africa, don't waste food" :(
These pairings were perfect! Loved hearing Brad and Priya were hilarious together😄
Brad calling for Claire is basically all of us.
Is nobody gonna talk about that scene at the end where Claire must have been filming a Gourmet Makes while Chris burns his meringue? But I don't recognise the episode, so a future episode? At 11:02 we see the sous vide machine (so she's tempering chocolate) and at 11:11 it looks like Claire is holding a homemade Malteser 🤔 So can we expect Pastry Chef Attempts to Make Gourmet Maltesers soon?
Jada M whoppers!!
There's a podcast with Claire in it and she talked about the upcoming episodes of Gourmet Makes, seems like we might be getting some pop tarts and pop rocks!
She was on a podcast called the Watch and said M&Ms!
@@ellieboa They look too big and too round for M&Ms, but could be it?
@@kakahahut yes! you are right it's pop rocks!
Question: How do you save...
Everyone: No.
Priya: YES!
