Yeah, I paused the video once he said that. Then I scrolled down and this was the top comment. I was not disappointed.
They should give each chef a recipe with all the ingredients measured and out in front of them.
The catch is they don’t know what the recipe is.
They would then try and make not the exact recipe, but a dish using the ingredients.
It would be cool to see all of the possibilities and how each of them think!

Dude YES! Usually I don't cook by recipe, I cook by "hm, what sounds good?" Then grab a bunch of random stuff that's in my pantry and throw something together.

When Chris looks into the camera and says “what have you done?” In the zesting segment, I could feel the judgement. I felt shame, and I deserved to be punished.

E is for emulsion. He was explaining how to keep emulsions emulsified and not separating them and try to emulsify them again. Butter was just a handy ingredient.
