You could use soy sauce as substitute, but less than 1:1 ratio, because the soy sauce is a little saltier than oyster sauce, and oyster sauce is a little sweeter than soy sauce. And add a bit of sugar.

In the absence of corn starch, can I use flour
Yes you can I do it all the time and I use rice vinegar if I don’t have rice, wine, teriyaki sauce for the oyster sauce if I don’t have it sesame seed oil, garlic oil sometimes when I don’t have something, I substitute it and it still come out good but you can use flour for cornstarch

You can use almost any cut in the meat section. Because we use a little bit of baking soda, you don't have to worry about the meat being too tough.

I don't like bell peppers at all. I can't even tolerate the smell of them. I hate not liking them because they add so much colour to a dish. However, that looked absolutely delicious! I will definitely be trying this dish, but adding different vegetables instead of the bell peppers.

We use VERY little sugar. You won't taste it. It's used to balanced out the salt. You can definitely leave it out.
