Thanks for making this video and showing everyone. I see some people complaining about dirty hands, but maybe they are thinking from their environments' perspective. In deserts, I have seen temperatures of 50 degree Celsius, and absolutely dry climate. No bacterias are present in such conditions.

When a stranger knocks on rich family's door and ask for water or food, he/she will be asked to leave and if same person goes to a poor family, he will be given water and food irrespective of how less they may have for themselves...then how come poor are poor, they are so rich with their hearts....never ever never disrespect poors, they have bigger hearts than yours!

I do love such humble people who r ever contented with what God has provided them. Bcoz, ultimately contentment is what all of us r looking for. I hv also seen few Rajasthanis making rotis in another way. After heating a roti for few minutes in pan, they applied butter and clamped it directly over the fire with some tool for couple more moments. And the roti puffed up. Hope someone knows that method. They can explain better than me.
I like that you don't pollute the natural sounds of the people and places with music. It feels artificial when people try to add music during a demonstration video. I love these cooking videos from around the world. Please keep making them.

It is not difficult though. Just put mix of ash and sand into the dish with a little bit of water, wash with hands or bunch of grass as if the sand and ash were a washing powder and that`s it :)
+Saba Khan During my childhood I used to visit my grandma in her village and I saw her clean utensils with ashes and sand. You just wet the sand a little and scrape it around the utensil, it is an abrasive so it picks up the grease. Then you rinse with water & voila clean chemical free dishes :). This did not last long as detergents soon reached villages, now only extremely poor areas use sand & ash to clean utensils.

We call it Kibiis in Somaliland and we mix ghee into it while we kneed the bread and as it pan fries, it comes out flaky on top like a croissant but more hearty in the middle. Reminds me of my mom making this in the mornings or with fish stew for dinner. My dad side is Somali/Yemenites and they would add coriander to the Kibiis and call it Qhidaar

Just discovered your channel..I'm amazed at what you are doing, and the fact that you can appreciate these flavors, though not being very used to them...and however you have got a rapport going on with them, that they share their recipes and tape them/live with them despite the language barrier. Keep up the great, amazing, outstanding work! The best recipes are definitely from such small local kitchens! PS. I believe what you called butter might actually be "ghee" which is a preparation made from cow milk butter, used a lot in cooking all around the Indian subcontinent..and of course is delicious :) It is available in the western world as "clarified butter"..but I would recommend buying the "real thing" called "desi ghee", desi- roughly translating to "country (again the Indian subcontinent) " available in any Indian grocery store around the world.

for making wheat chapati dough you need half water exactly like two cup floor and one cup water.Of course whole wheat floor with wheat bran.sometimes water can be replaced with fresh whey which is obtained while making paneer or cottage cheese at home.When roti swells there is steam inside which bakes or cooks roti.

We too cook on LPG now a days but we still have that wood fire chulha in our backyard and believe it only after you try; the food tastes a lot more tasty traditional way ;)
