So we must maintain our quality at a high grade." This philosophy of constantly striving to do better for their customers is so common amongst Japanese chefs. In other countries, chefs who make a name for themselves typically put their focus on commercial success (franchising, TV shows, etc.), often at the expense of their products.
Although Chef is undoubtedly handsome and skillful...my most urgent question is why doesn't he have other seasoned bakers on staff to assist him? That's a lot of bread & pastries to bake. This can't be as easy as it seems 😮. Thus, despite doing all of the baking by himself (unless there's some unseen baking crew not on camera...Lol), this obviously, at best, is a two to three persons job. Just saying 😵💫😁.

I wish we had quality bakers like this in the United States! There may be a few, however the desire for the skill and quality have left our culture.
