My Great Aunt from Mississippi made this pie in the summertime a lot. So good and perfect for hot days! She used the smallest frozen pink lemonade tube for a "pink lemonade pie." (All other ingredients were the same as yours, just replacing the lemon juice w/frozen pink lemonade - thawed to mix.) She added Nilla wafers around the edge for decoration.
I've been making this since I was 7 years old, and I'm 50 now. I am going to recommend that you DO NOT use lemon juice out of a bottle, but squeeze fresh lemons. The taste is SO much better! I usually use 6. Also, brush your crusts with butter and put them in the oven at 350 degrees for about 5 minutes. Nilla wafer crusts taste pretty good with it too.
Made one tonight with fresh lemons and all I had was a regular pie crust which I baked a few minutes and had to wait for it to cool off. Turned out great.
Yeah, the only part of this I can have is the lemon juice. It looks wonderful, though. If you can tolerate the fat (actually worse in the long run than sugar for diabetics) you could whip the cream cheese with the lemon and add some stevia or other sweetener to taste. If you stay away from sugar as a rule you should be able to get by with less than someone who is used to it. Put it in a custard dish and top with fresh berries and that cuts the carbs from the crust.
@@dianeladico1769 Whomever told you fat was worse than sugar in the long run, was dead wrong. It's just the other way around. All I eat is basically bacon and eggs and I've been doing that for several years now. My diabetes is under control but my main source of food is fat.

I am sure this is delicious but if you want to take this up a few notches, add egg yolks and lemon zest then bake for 30 minutes at 350. It is really quite delicious.
Hmmmmm… I might have to try that. Since this video, I have added a block of Philadelphia cream cheese. It makes it soooooo much better. Still no baking. 😊
