Opinel slimline filleting knife boning out fresh mackerel

- This particular model of Opinel, the slimline, has a long thin stainless steel blade and a bubinga wood handle. I find it perfect for filleting fish. A great blade to take on a fishing holiday, but it is an evil looking thing so be sure to pack it in your hold luggage, not your pocket!
In Britain, the state has effectively criminalised the carrying of knives in public places. this is because some people stab each other. Of course, they ignore the law while honest citizens like me who often have a sharp penknife in their pockets now live in fear of both criminals AND police.
What a GREAT man to remind us of the importance of retaining what liberties we have left! Five years for having a knife is insane. Here in So. Cal., mackerel are considered junk fish. BUT to me, they are VERY enjoyable to catch. What a fight they put up! I take my catch to a Mexican guy who works at my favorite hamburger hut. I think he makes ceviche with them. You should have seen his excitement when I presented three rather large ones to him last week! Maybe knowing how to remove the bones after seeing your video will enable me to enjoy them from now on. I dunno the price in Californa, but here in Europe, from the adriatic sea, Croatia, it's always about 10 bucks a kg, (something like 2 pounds I think), quite expensive for the standard if you ask me, you americans are quite lucky...I mean you buy 2 kilos for 2 persons, when you fillet it, it's quite less naturally and in the evening you get hungry...

The funny thing is, you can carry a full length fillet knife in the UK as long as it is part of your fishing gear and you can show you are going or returning from a fishing trip. But locking knives have been banned completely in the UK and it has done nothing to prevent knife crime at all.

Just a quick tip, bleeding your mackerel by slicing the neck or the tail as soon as you catch it then transferring them to cold water will result in much firmer flesh and less blood. They'll taste cleaner too, much less fishy.
This was a very enjoyable video, thank you for making it! That was an outstanding job you did filleting that fish. I love opinel knives, they are some of the best cutting knives on the planet.

beautiful job. I don't even think to fillet fish near that size because I mess em up so bad. I like opinel knives, but have had them rust up on me before. Still use em for my camping knife because they're ultra knife. Good video

Quick tip for anyone who owns one of these. I typically finish my opinels using shellac. Durable, old school, looks good, blah blah...BUT the filet knife I finished with tru oil and it works out great. Tru oil is a gunstock oil (for those who don’t know) and it’s basically indestructible. You can also paint it into the little corners to keep blood and nastiness out of the wood. So for anyone who’s using these for their intended purpose and doesn’t want a blood stained, crime scene lookin filet knife...tru oil is where it’s at. Smells great, too...

Pro tip: You can use every part of a fish. The bones can be dried, then ground up in a coffee grinder then mixed with sea salt. This makes a nutritious seasoning for vegetables or whatever. Alternatively, the bones of most small fish can be fried in butter or olive oil until golden brown. Add salt and eat like chips. Cheers
The head and bones can also be boiled to become fish stock as well.

As a Canadian I am saddened that rationality has left much of the Commonwealth when it comes to honest men and knives. A man takeing an Opinel fillet knife fishing should not face 5 years in prison in a just / sane society. Thank you my great great grandparents for high tailing it for the rough and tumble colonies and lax knife laws 8-)) ! Excellent product fillet knife. I use it often to remove skin from Salmon. The safety cover is approximate as it is very sharp.

@sandmothtube Thanks fo rthe interest. I bought mine in France, it has no markings apart from Opinel stainless inox (inoxidable) France, not even a number. So sorry I can't help you there.
I use it mainly on holiday as I have a Martiini and also a Gerber filleting knife for use at home, but this probabaly outperforms eityher of them.

I have a couple of Opinels. They are terrific value for money but as you mention, they are not the sort of knife you can risk slipping in your pocket if you are out and about.
I agree with the sentiment - i think he should make a series out of it.

Nice style, different from mine - when you have a box to deal with rather than a couple of fish you're inclined to use the quick Whizz-Whizz method, pin-bones or not!
But next time it's for my table, I'll give your way a good try out.
Does one know here with the Slim Line Opinel?
If so, is it true that fold up by itself in the bag and the blade is not properly absorbed by the magazine and thus there is a high risk of injury?

If u cut the mackerel behind the base of skull then pull its head in a downward motion it will take the head and guts in one step

Nice video. I like to do longer smoother strokes with my blade over the short sawing motions here. Keeps the meat nicer and together better.Years as a sushi chef I guess.
how do you clean your opinel afterwards?
dish soap and water. if it is carbon steel lightly oil with something food grade safe like mineral oil or Pam/vegetable oil. clean before use again

+wormfist no but I don't use mine to much. I use a carbon steel Mora 511 for most of my cutting chores. you can oil the wood as well with mineral oil. should keep it from cracking and swelling👍

All pocket knives are illegal to carry in Britain? Also are Spanish Mackerel seasonal to catch in the waters off of Britain's coast or can you fish for them all year long?

Some people do, but then you have the bones in the fillet. This is just how i do it, there may be other ways.
