Beta Target explained from Airbus a320 FCOM//flight controls

FCOM says :-
If one engine fails, the FAC modifies the sideslip indication slightly to show the pilot how much rudder to use to get the best climb performance (ailerons to neutral and spoilers retracted). In the case of an engine failure at takeoff, or at go-around, the sideslip index on the PFD changes from yellow to blue (to provide the conditions for the blue display of the sideslip target,

It’s altitude 25,000 & 30,000 @ 7:25
and the e/wd image @ 9:28 is not having EPR difference of 0.25 , I could find suitable e/wd image on google so taking this as reference.
