- Karkidaka Kanji Recipe - Anjilipola Kanji
Ingredients
Rice - 2 kg
Wild jackfruit tree bark- 4 or 5 pieces.
Jaggery - 250 gram
Grated coconut - 1 cup
Cumin seed - 1 tsp
Method
First, we have to cut the outer bark of the wild jackfruit tree .
Then peel it and set it aside.
Then cut it into medium sized bark and keep it in a pot.
Then pour water on them and wash them well.
Drain and keep aside.
Heat water in a pot, add jaggery and boil them well.
Once the jaggery is completely melted, set it aside.
Then crush the bark pieces and set them aside.
Heat water in a pot and add crushed tree pieces.
Again, add a sufficient amount of water and set it aside. Mix them well.
Cover them and boil them well.
Once the water is well boiled, drain the water and keep it on the side.
Heat a pot and add the Wild jackfruit bark drained water.
Then measure the rice and add it to the pan.
Pour the water on top and mix it well.
Drain them well and set them aside.
Again, pour water on them and rewash them well.
Drain and keep aside.
Again, add cleaned rice to the wild jackfruit tree water pot.
Stir them well for a few minutes.
cover and boil them well.
Take a pan,add grated coconut and water.
Squeezed them well with hands.
Drain the thick coconut milk and set it aside.
Repeating the same process on thin coconut milk and setting aside.
Remove the lid from the rice cooking pan .
Pour in the jaggery water and mix them well.
Again, add thin coconut milk and stir them well.
Then add cumin seeds and mix them well.
Now add thick coconut milk and mix them well.
Then cook for a few minutes
Remove from the fire and set aside.
Serve the wild jackfruit tree bark water porridge and set it aside.
