MAKE AHEAD Corn Mushroom Bake! Thanksgiving Side Dishes 2022

    CORN-MUSHROOM BAKE
    (from Better Homes & Gardens Make-Ahead Cook Book, 1975)
    1/4c all purpose flour
    1 - 16oz can cream style corn
    3oz cream cheese, cut into cubes
    1/2tsp onion salt
    1 - 16oz can whole kernel corn
    1 - 6oz can sliced mushrooms
    2oz process Swiss cheese, shredded
    1c bread crumbs
    2Tbsp butter, melted
    Advance preparation: in a saucepan over medium low heat, stir flour into cream style corn. Add cream cheese and onion salt; heat until cheese melts. Drain whole kernel corn and mushrooms; stir into hot mixture along with Swiss cheese. Pour into 1.5qt casserole; cover and chill. Toss crumbs with butter; cover and chill.
    Before serving: Bake casserole, covered, at 400 degrees for 30 minutes. Top with prepared crumbs; bake, uncovered for 20 minutes. Makes 6 to 8 servings.

    I love a corn casserole! I agree that fresh mushrooms would definitely add a lot to this. Canned mushrooms are pretty blah.

    My Mother n Law had a great tasty savory gelatin recipe. It was delicious. Ingredients were 1 large box orange Jell-O, 1/2 cup finely shredded carrot and One-15oz can crushed pineapple. 1) Drain juice from can of crushed pineapple into measuring cup. 2) Add additional cold water to equal amount needed per box instructions on Jell-O box- needed for cold liquid process on box. 3) Mix juice & cold water together until blended well. 4) add cold liquid mixture to the dry Jell-O and then mix well together. 5) Now add remaining hot water- per Jell-O box instructions needed to cold liquid mixture & Jell-O- mix well until Jell-O dissolved. 6) Now mix in drained crushed pineapple and shredded carrot to Jell-O mixture blend well. 7) Pour Jell-O mixture into mold and cover- and place in refrigerator until mixture is set firm. 8) Once mixture firm can top with whip cream per serving.

      It was a long time ago, but I have eaten this! It was most likely at a family party (large extended family = a whole lotta potlucks!) I like carrots and LOVE pineapple, so this one worked out ok for me.

Some of the comments...have not been kind. 😂 I think people who aren't familiar with my videos just expect a quick recipe but not the book review.     My mom had several impossible pie recipes in her stash. I once accidentally, like, quadrupled the amount of Bisquick in one, and it was amazing - a giant mound of golden brown goodness! And even then, it didn't overflow the pie plate.

    Yum.. I'd add bacon or ham plus yeah some onions and maybe some peas? or some green chilies and maybe some other spices.. gar.ic powder, pepper, paprika .. that kind of thing

    Creamy ham tower!!! If you don't ever get around to making that, I will only know deep disappointment. NO PRESSURE! Though I'm glad you're not going to make the turkey in aspic. Who wants Neutrogena Turkey? I love the whole concept of this book... it really does take the stress off those big events when you can make ahead and store properly. This turned out quite lovely! You found an excellent one. Some fresh, sauteed mushrooms would probably be amazing for this! Nicely done Anna!

      Absolutely! That's what made me want to have a 'Friendsgiving' the week before actual Thanksgiving. People get so creative and bring such fun dishes. This is going to be our first time hosting a Friendsgiving celebration since 2019. 😲
