    Another excellent lesson. I use cool water for boiled dumplings but hot water if the the dumplings are only steamed or pan-fried & steamed. This ensures that the flour is fully cooked since the heat transfer rate is much slower for steam than for boiling water.

    I am also a fan of your natural msg that I make in a food dehydrator and then toast the fish filets on the gas grill. My brother in law catches a lot of fish and this is a good use for them. The fish powder is an amazing addition to recipes.

    You have taught me so much about Chinese cooking which is a skillI have wanted for many years but never had a good source. I made these dumpling wrappers today, and there is no way those pieces are 12 grams. I have a scale and measured 12 grams and the pieces were so small you could only get 1/2 tsp of filling in at most. I think you meant 22. When I doubled the grams, they came out looking like your pieces and what I get at restaurants. They are prepped and ready to go. Will let you know how they turn out.     Hi! Today i did my first attemp to cook homemade dumpligs following your recipe... I failed miserabilly, my doung was too sticky, i added more flour but also, i thinked it would be much more easy to make the closing for the dumlings, the "repulgue" as spanish speakers usually call to the closing finishing of the dumpling, or "empanadilla"... All that i've stated was my fault but has been a funny first approach to the recipe! so thank you very much! I'll enjoy improving my style ;)

    It also depends on where you live like if you live in Arizona and in the western state you will need a little more water, if you live in an area where it's more west you will need less water. I hope that this helps also living in the upper states the flower will need more or less water.

    Just a suggestion: a more accurate way to achieve the right water to flour ratio is by weight. For example, if you're using 100 g of flour, a 50% hydration rate would be 50 g of water. Weight is much more reliable than amount. Also, the higher a flour's protein content, the more water it will need. A low protein flour might only need 45% water by weight where a high protein flour could need up to 55% water by weight to achieve the same desired consistency. A kitchen scale is every cook's best tool. Beautiful dumplings, Mandy! Now I'm starving.

    Up here in Canada, we can buy chicken and cilantro dumplings so that would work as a greens substitute as well. I like to use wild greens from the property. Lamb's quarters/Chenopodium is my favorite. ☺
