Hi Becky! In Mexico pickled onions are a must in every fridge, but our recipe is a little bit different. I guarantee it will go perfect with tacos and enchiladas. The brine is one part vinegar and one part water, salt, pepper and oregano. And it goes with red onions. Enjoy!

Beck as a made Cuba gal, a tip for next time. We make marinade for the pork the day before. We inject it inside the pork over night and that's how you get the real taste of our famous Cuban flavor. We do not use onion until it is almost cooked, like mojito oil, to braise the last hour. We do sour orange, lemon, coriander, cumin, garlic, salt, lots of garlic, cilantro and olive oil. Try next time over night you'll see the real taste of A Cuban. You need good cheese and like your substitute for pickle.
Also, Swiss cheese, butter, and pressed. Before we got a Panini press, I just covered with foil and put a cast iron pan on top to squash them. Time for me to go to Publix (our best grocery) and get the goods.
Hey Becky what seems to have caused the head to fall out of the wooden handle of the Danish dough hook may be because it gets washed in the dishwasher which may have caused the wood to shrink. I wash mine up by hand and have not had any problems in the many years since I bought it.

The pork is marinated overnight with the "mojo" sour orange, garlic etc... no paprika. We use swiss cheese instead of provolone cheese. The sandwich is pressed you can use a panni or in a pan. Making cuban bread is quite easy using lard is key.
A while ago, you inspired me to make 6 different cookie recipes and freeze them for later. There were 25ish cookies in each recipe except for the chocolate chip because I knew we'd eat more of them, so I doubled that. Now, instead of buying sweets, we throw some cookies in the oven
You can freeze egg whites instead of tossing them. They work just as good as fresh ones when making, for example, an angel food cake. You need about 12 egg whites for that cake, so this is a way to use the whites. I put a label on the top of the container I put the egg whites in to tell me how many are in there.
I used to have the wooden handled danish dough hook, but I went ahead and ordered the all stainless one recently. Don’t have to oil the handle, and I’m more comfortable putting it in the dishwasher😊
My Danish dough whisks did the same thing. I have learned, and recommend to hand wash them. Running them through the dishwasher sadly makes them tear up sooner.
Hi Becky! I have a MockMill 200 and I absolutely love it. It allows me to grind flour finely and I can grind corn fine-course. It has never failed me! You need to look into a Bosch Universal mixer! I got the one with stainless steel bowl. It is freaking amazing and can handle large loads. Far superior to Kitchen Aid. All this food looks amazing!
I've looked at the Bosch Universal as well ... I just have so MANY KitchenAid attachments that it would cost me a(NOTHER) small fortune to try to replace them - so I just upgraded to a 7qt. KitchenAid instead, more power and I can still use my attachements. Now, if I ever won the lottery ... 😆

That dough whisk can be fixed with a little 5 min epoxy. Once the epoxy is fully cured it's safe to use with food since if the food does come in contact with the cured resin it won't be contaminated. I've fixed several kitchen tools that way.

Looks delicious! Becky, some advice that I got many years ago, if you put your wooden utensils in the dishwasher, that could be the reason for your whisk coming apart (also that amount of cookie batter was too heavy for it - I would have switched to a wooden spoon at that point). Wood will get distorted with that much exposure to heat and water - especially true for any piece that has parts that fit together, like the whisk. All wooden utensils should be hand washed if you care about their appearance and longevity.
Good morning friend! I have a tip for your hoagie rolls…. If you like crispy crust, you spritz the dough with water, right before you bake them. You can spritz the oven, too; or put a few ice cubes o the bottom of the oven to steam your breads.

The only mill you can use inside the house ( flour dust everywhere ) is the NutriMill Classic High-Speed Grain/Flour Mill. We call ours R2D mill. The first one lasted about 8 years, the second we are still using. Believe me, I've done my 'homework'.
Just a little suggestion...with the price of eggs, when you separate whites, put them in a qt. Zipper bag in freezer. When you have a dozen you have enough for an angel food cake. Homemade are easy and taste amazing. For an extra treat slice in thirds and fill with lemon curd.
As part of my pantry challenge, I had a can of cherry pie filling to use up. I was so glad to have pie dough in my freezer at the ready when I decided to make hand pies. They were not only delicious but also cute. I formed them using a thrifted dumpling press.
MOCK MILL hands down! I researched the dickens for which one I would get. It’s stone ground is adjustable grind for corn or cracked grains not off the charts expensive and the makers will happily talk to you about the mill even after purchase! Huge plus! I think it’s healthier than an impact mill the flour doesn’t get as hot in the milling process too. It gets warm but not hot. I have had it for three years and never unhappy with it I use up it at least twice a week. And also got the Ankarsrum mixer it’s absolutely a tank for making breads it’s never ever complained At anything I’ve thrown at it has a very long history of standing the test of time it’s a once in a lifetime purchase. Love it

I’m from the uk and had never heard of a Cuban sandwich, definitely going to try though! We have something called a hog roast which is roasted pork, sage and onion stuffing, apple sauce and gravy , all in a bread roll/ baguette( and crackling from the skin) which is a family favourite, so will be nice to surprise them with something a little different!
I’m from Tampa FL where Ybor City is, it is called little Cuba. Authentic Cubans are sliced ham, sliced roast pork, Swiss cheese, dill pickles and mustard then the assembled sandwiches are pressed. They come out flat and very crispy on the outside. In TX now so I substitute turkey for roast pork when I don’t prepare to roast meat and then I use my panini machine to press them. Now I really want a Cuban bad. I make my bread in my bread machine, I’m not a kneaded.

Cuban sandwiches are from the area of Florida I live in...the best part is pressing the sandwich (basically toasting the outside of the sandwich). I've never had it with pickled onions before...but sounds yummy.
Do you weight it down? One of my favorite restaurants is Columbia in Sarasota and Tampa. It seems they squish it almost like a panini, but that could be the toasting top and bottom. I have some pulled pork in the freezer that I have been wondering what to do with. Could that work?
@@carolynmills513 If you don't have a panini press, just put the sandwich on a skillet, cover with foil, and weigh it down with a cast iron pan. That will squish it.

Becky, be careful when you have foil in your oven. My mom had a loose piece of foil in the bottom of her oven. For whatever reason, we think when she was either opening or closing her oven door, the foil moved and touched the element and shorted out her entire stove. It was fairly new and she was devastated. I never imagined that could happen, but it did. ☹️ so just passing on a heads up. Love your channel soooo much and all the yummy stuff you make. Enjoy life! ❤
Handy tip: dissolve sugar and salt in a cup red wine vinegar and add to onions that are in the jar. Top up with vinegar and water. Ensure even distribution of ingredients 🥰
I have the danish dough hook and I hand wash mine. It's glued together so using the dishwasher makes the wooden handle come off eventually. Hope that helps you! ❤

Oh man Super glue the dough hook back into its handle. Life is all about balance and learning as we grow older. You flow easily in the kitchen so try and flow easier into Motherhood and the new routine. It is precious to hear Baby A in the background. Your version of the cuban sandwich sounds like a winner, I will have to try that. Our family just left today, Tuesday the 4th. So now to finish our chicken coop, finishing and filling our raised garden beds.
Traditional Cubans have Swiss cheese, sour orange mojo pork, black forest ham, salami, yellow mustard, and pickle slices. I like the onion sub for the pickle. We also press the sandwich in a hot skillet instead of putting it in oven. There is something that happens to the Cuban bread when you press it and toast it that way. Good job on your first try

As another Cuban Girl…. For the pickles maybe just use a Dill Pickle Brine for any veggies you want to pickle. But the other young lady speaking about Cuban Roasted Pork is absolutely correct. The cheese is Swiss. And Slices of ham. Butters bread inside and out and pressed in a bread press… stove or panini.

Becky - I highly recommend Komo grain mills. I have the model called Fidibus medium. It's a stone mill and grinds wheat, dent corn, and rice quickly. I don't pre-grind flour, I grind the flour for each baked good fresh and the mill is the perfect size. I've had mine for over a year. Set up took about 5 minutes and has been very easy to use. I don't leave appliances on the counter, but this mill is so beautiful I am happy to display it proudly!

I know this may be too late, but we love our Grainmaker grain mill. It gets flour much finer than any other mill. We started with a hand crank one and bought the motor years later. The motor is much quieter than the other electric mills we've tried.
Your bread rack should have been higher up-lower to cook the bottom more! Higher for a browner top. Bread rack is generally in the middle of the oven, one crust pies lower down.

Keeping the house afloat is NOT the bare minimum! It's okay to slow down now and then. You're awesome!!
Becky use your instant read digital thermometer to see if bread is done, if it's between 190-210F then it's baked all the way through!

Looks delicious! Becky, some advice that I got many years ago, if you put your wooden utensils in the dishwasher, that could be the reason for your whisk coming apart (also that amount of cookie batter was too heavy for it - I would have switched to a wooden spoon at that point). Wood will get distorted with that much exposure to heat and water - especially true for any piece that has parts that fit together, like the whisk. All wooden utensils should be hand washed if you care about their appearance and longevity.

I have a tip for your hoagie rolls…. If you like crispy crust, you spritz the dough with water, right before you bake them. You can spritz the oven, too; or put a few ice cubes o the bottom of the oven to steam your breads.

My husband feels the same about cucumber pickles. So we pickle banana pepper rings and use them like regular pickles!
The only mill you can use inside the house ( flour dust everywhere ) is the NutriMill Classic High-Speed Grain/Flour Mill. We call ours R2D mill. The first one lasted about 8 years, the second we are still using. Believe me, I've done my 'homework'.
Just a little suggestion...with the price of eggs, when you separate whites, put them in a qt. Zipper bag in freezer. When you have a dozen you have enough for an angel food cake. Homemade are easy and taste amazing. For an extra treat slice in thirds and fill with lemon curd.
Or you can use the saved egg whites for cake icing.
As part of my pantry challenge, I had a can of cherry pie filling to use up. I was so glad to have pie dough in my freezer at the ready when I decided to make hand pies. They were not only delicious but also cute. I formed them using a thrifted dumpling press.
MOCK MILL hands down! I researched the dickens for which one I would get. It’s stone ground is adjustable grind for corn or cracked grains not off the charts expensive and the makers will happily talk to you about the mill even after purchase! Huge plus! I think it’s healthier than an impact mill the flour doesn’t get as hot in the milling process too. It gets warm but not hot. I have had it for three years and never unhappy with it I use up it at least twice a week. And also got the Ankarsrum mixer it’s absolutely a tank for making breads it’s never ever complained At anything I’ve thrown at it has a very long history of standing the test of time it’s a once in a lifetime purchase. Love it

We use the sliced pork (as the ham) we don’t shred it.
At the end the sandwich is pressed.

I’m from the uk and had never heard of a Cuban sandwich, definitely going to try though! We have something called a hog roast which is roasted pork, sage and onion stuffing, apple sauce and gravy , all in a bread roll/ baguette( and crackling from the skin) which is a family favourite, so will be nice to surprise them with something a little different!
I’m from Tampa FL where Ybor City is, it is called little Cuba. Authentic Cubans are sliced ham, sliced roast pork, Swiss cheese, dill pickles and mustard then the assembled sandwiches are pressed. They come out flat and very crispy on the outside. In TX now so I substitute turkey for roast pork when I don’t prepare to roast meat and then I use my panini machine to press them. Now I really want a Cuban bad. I make my bread in my bread machine, I’m not a kneaded.

Cuban sandwiches are from the area of Florida I live in...the best part is pressing the sandwich (basically toasting the outside of the sandwich). I've never had it with pickled onions before...but sounds yummy.
Do you weight it down? One of my favorite restaurants is Columbia in Sarasota and Tampa. It seems they squish it almost like a panini, but that could be the toasting top and bottom. I have some pulled pork in the freezer that I have been wondering what to do with. Could that work?
I kept saying, "NOOOO! It's SWISS cheese!"

@@carolynmills513 If you don't have a panini press, just put the sandwich on a skillet, cover with foil, and weigh it down with a cast iron pan. That will squish it.

Becky, be careful when you have foil in your oven. My mom had a loose piece of foil in the bottom of her oven. For whatever reason, we think when she was either opening or closing her oven door, the foil moved and touched the element and shorted out her entire stove. It was fairly new and she was devastated. I never imagined that could happen, but it did. ☹️ so just passing on a heads up. Love your channel soooo much and all the yummy stuff you make. Enjoy life! ❤
Handy tip: dissolve sugar and salt in a cup red wine vinegar and add to onions that are in the jar. Top up with vinegar and water. Ensure even distribution of ingredients 🥰
I have the danish dough hook and I hand wash mine. It's glued together so using the dishwasher makes the wooden handle come off eventually. Hope that helps you! ❤

Seeing all of the beautiful eggs just after you made the quiche made me wonder if you could freeze dry quiche kits in some way shape or form(like the brownie & cornbread in a jar).

Oh man Super glue the dough hook back into its handle. Life is all about balance and learning as we grow older. You flow easily in the kitchen so try and flow easier into Motherhood and the new routine. It is precious to hear Baby A in the background. Your version of the cuban sandwich sounds like a winner, I will have to try that. Our family just left today, Tuesday the 4th. Traditional Cubans have Swiss cheese, sour orange mojo pork, black forest ham, salami, yellow mustard, and pickle slices. I like the onion sub for the pickle. We also press the sandwich in a hot skillet instead of putting it in oven. There is something that happens to the Cuban bread when you press it and toast it that way. Good job on your first try
Becky, did u see the comments in your video showing the raised beds being built and leveled that people were saying the wood posts in the cement rot and that they should be metal posts? I've been fretting over the fact that there are so many comments in your videos that you wouldn't see the comments about wood versus metal posts.
As another Cuban Girl…. For the pickles maybe just use a Dill Pickle Brine for any veggies you want to pickle. But the other young lady speaking about Cuban Roasted Pork is absolutely correct. The cheese is Swiss. And Slices of ham. Butters bread inside and out and pressed in a bread press… stove or panini.

Becky - I highly recommend Komo grain mills. I have the model called Fidibus medium. It's a stone mill and grinds wheat, dent corn, and rice quickly. I don't pre-grind flour, I grind the flour for each baked good fresh and the mill is the perfect size. I've had mine for over a year. Set up took about 5 minutes and has been very easy to use. I don't leave appliances on the counter, but this mill is so beautiful I am happy to display it proudly!

I know this may be too late, but we love our Grainmaker grain mill. It gets flour much finer than any other mill. We started with a hand crank one and bought the motor years later. The motor is much quieter than the other electric mills we've tried.
Blind bake pastry before adding quiche mixture
Your bread rack should have been higher up-lower to cook the bottom more! Higher for a browner top. Bread rack is generally in the middle of the oven, one crust pies lower down.

As well, when I first started making pies my piecrust would be gooey on the bottoms until I learned from Jean Pare’ cookbook to always cook your pies on the bottom grate. 😊

Cubans are my favorite. You have to try it the traditional way. The recipe we used had sweet pickles and it was phenomenal.
