How do I know exactly when to spray it and when not to.
You start to spray it when you can touch the meat with a finger and none of the seasoning comes off.
@@BackyardGarage1 sorry to bother you but I had one more question kinda emergency I've got a huge brisket flat on right now, usually I smoke on the top rack but it's too big so should I cover my broiler plate with the slide or will it be ok over direct heat like that. I have it set to 250?
That cut looks rough. Meat didn’t pull apart, and bent test didn’t look good. That being said, if it’s good to you, it’s good. Great job!

The fat cap supposed to protect the meat during the cook, you need to work on your knife skills
