Had the joy and pleasure of spending a month with Paul and Warren LaRuth focusing on the use of spice to layer in flavor. Both were legends and will be a memory ill never forget.
Chef Paul looked up to Warren LeRuth, I remember he used to buy his vanilla flavoring from Warren. I also remember that Warren LeRuth allowed Al Copeland to use his recipe for the biscuits they serve at Popeyes. No wonder they are so good!
Both have lovely enjoyable personalities. Use Chef Prudhomme's gumbo recipe often. Learned from listening to him that cooking is chemistry. Helped me create my own dishes.
He also had a place in Westminster Colorado called Steakmaster...and he gave me my first job. Introduced me to Doug Kershaw, taught me to make roux, told me his secret ingredient for potato soup and inspired me to put myself in the pot. He skipped town owing me a hundred bucks but left me with a work ethic I never could've gotten any other way.
I saw Chef when I was maybe 11 or 12 years old, he came to a nearby grocery store to sell his spices and cook up good eats. I didn't know then he would become as famous as he was. Remember he was a funny guy and if I can find his spices online still, I'm going there now to buy some.
They came from the same ancestors. Paul's mother was a LeDoux... which is the French branch of the DeLoux Clan (DeLoux became DeLouis, then Deluise.) LeDoux/DeLoux means "friendly."
