I just wanted to take a minute to tell you how much you bless me with your honesty with your health issues and your joy over the garden and your love for the Lord.     Your videos are food for my soul. I have really struggled in my adult life with friendships turning out to not be as wholesome or honest as I had thought, and just having someone with a good heart and joy to spread makes me heart so incredibly happy.

    I just wanted to tell you that I sell tomato seedlings for the past three years and one of my customers asked why I grow the varieties that I do and I told him I was inspired by you. He says I watch her videos all the time. I love your channel and I talk about you like we are old friends ❤. You are awesome 😊

      I grow so many of Jess’s favorite tomato varieties, and they have become my favorites too! I always sell my extras, and I find the only people that know what they are tend to be roots and refuge fans! So fun to connect with other viewers!

    I robbed myself of YEARS of homesteading, being ‘impatient’ and waiting for the forever home. I’m so grateful that I decided to just start, only to then find you…encouraging me to turn my waiting room into a classroom. I’ve so much to learn still…I fail every single year, but this is my first year not allowing anxiety to take over, and allowing grace for myself to enjoy the patient process. I’m still believing for land, but I’ve never been more content with where I’m at now. Thank you!!!

    There is nothing like a fresh potato harvest and immediately cleaning and cooking. Just like most veggies. Fresh is the best! And the Shallot realization is freakin' epic. 😂.

    My grandpa, a Vermont farmer, LOVED his new potatoes. He would go out in the potato patch and dig around with his hands, pull those babies up and prepare them. He would croon," ah, mealy potatoes, the new ones are the best!" It was one of the rare times that my restrained New England grampa would get truly worked up, ha ha. I loved it when he did that.💖 Thank you for this video, Jess! Thank you for that effort you put into making this, especially when you're not feeling that wonderful. It means a lot to us out here.     Jess, hearing you talk about the weeds in your potato patch reminded me of a nature show I saw probably 25 years ago now! A Brazilian farmer with a small 1 acre plot was consistent growing 4 times the amount of food his contemporaries were. As it turned out, he rarely pulled weeds from his garden and he fed the soil the bounty of his harvest (the peels, skins, stalks etc. that were not eaten). It seemed that the bug pressure was vastly reduced on his veggies because the bugs seemed to prefer what they knew, the weeds! You made my entire week with this one vid! Thank you for being you and sharing with us! 🤩🤩🤩

    Tonight’s video really touched me. Your joy at harvesting the fruits of your labor while pacing yourself to stay within your health limitations - this is what makes me think it’s possible to grow food again despite my limitations.
    I absolutely love the story of Miah’s 6 year journey to prosciutto! I hope the whole family finds tremendous happiness in those things slices of heaven.

    I get it Jess, my husband and friends couldn’t believe I would plant asparagus from seed, if it was going to take 3 years to harvest it! But this year was year 3 and they sure all did appreciate my patience! Some things are just worth waiting for! Peace and blessings 🤗😋😁

    Digging potatoes is so fun I totally get you. You never know how many you’ll find. It’s exciting. Digging clams is like that too, it’s like an Easter egg hunt in the mud. I’ve been doing it for 20 years and each time I dig one up I’m like “ooh a clam!” How silly, right, but it never gets old. I hope you feel better! Sending love.

    I grow potatoes in bags and my grandson loves the "surprise" of finding the potatoes once I dump them in the wheel barrel.

    Thank you for sharing with us today, Jess! To dig in the garden, especially on a flare day means you're potentially exposing yourself to some of those healthy microbes in that glorious soil you are digging in and that's good for the physical side. And being in the garden, appreciating the toil and thought that went into it, as well as the time and waiting - benefitting your mental health as well! Take care of you because you're worth it!
    Also about trying something that has a long wait, not just a few months - YES! I was gifted a plaque that says, "Planting a garden means believing in tomorrow" and a plaque that says, "Planting a tree is providing for the next generation".

    I’m watching while having dinner- stir fry that has kale, green garlic, green and red onions, grown at the allotment ❤ Then my daughter brought raspberries from the garden. Such an amazing feeling.. From London, UK, with love 🥰

    I actually don't bother growing spinach anymore because I prefer lambs quarter by far. I harvest a bucket full, give them a wash, blanch them in a cold water bath, then make balls in my hands while squeezing as much water out as possible. I freeze the balls and use them over the winter. It is so delicious. I also dehydrate a whole bunch so I can use them powdered or use for whatever.

    I found that I love garden surprises! So this year I gave my cousin all of my seeds and had her drop them in for me while I was away. Everytime I see seedlings I try guessing what they are ☺️

    Oh yes, use the green parts of the onion to make powder. Actually if you freeze your onions and then dehydrate them, they take on a caramelized flavor, which is so wonderful for onion powder. Thanks Jess!!

    In the vein of slow food and planning, I maintain that gardening is time travel. This morning I planted pole beans that my parents managed to germinate a few years ago from 15 year old seed. People in my area of Appalachia have been keeping and growing greasy beans for ages and now I am too, even if it’s a different time and I’m in a different place. I will eat a meal that my great x who knows how many grandparents would recognize. That’s just wild to me.

    I also deal with an autoimmune disease, rheumatoid arthritis, I have my good days and my bad, I had to take a step back and really look into what I was eating, drinking and all the meds I was on, today I have been 1 year and 6 months meds free and eating and drinking more water has made me see you need to grow your own.     I’m 100% with you! I mean, I love the beauty of my tomatoes and the smell of my herbs and the sweetness of my strawberries but absolutely nothing is as fun as digging through the soil and finding a big ol’ spud. Favorite garden chore by far

    I did potatoes in grow bags this year. I wasn’t going to grow them bc I haven’t had good luck the last two years but you always remind me that if I don’t put it in I won’t get anything. So I had a small area next to some beds where I was able to hook to my drip and I bought $5 worth of seed potatoes from my local ace hardware. We harvested yesterday and have a little more than a 5 gallon bucket full with only 6 smaller grow bags. You encourage me everyday and now I have potatoes. I’m so proud and excited. Your videos make the biggest difference for me when the garden is kicking my butt. Gardening has changed my life physically and mentally. Garden fresh food is real food and nothing compares. Bless you!

    New potatoes are fantastic!! Have you ever fried them? I cut them in quarters, put them in water, then mix flour, corn meal, salt, pepper and garlic , dredge the potatoes and shallow fry them in oil or preferably lard. I pulled my garlic today because it was starting to rot but I didn't get a very good harvest. I planted them in October, I'm in Kentucky, and they were drying and starting to fall over. I planted rhubarb for the first time this year. I have lupus along with a few other autoimmune illnesses, so I understand the tiredness.

    Fresh baby potatoes were always my favorite time of year as a kid, fresh from the garden and boiled with the paper thin skin on with mint then served with butter and salt n pepper.

    Thanks for sharing your gardening experience with us, your videos always bring a smile to my face and joy to my heart and the encouragement I need to keep planting even when its unclear if I will live at my current place long term. My last house I had planted many fruit trees and nut tree lots of asparagus ect that we ended up selling the home before we got to eat from those plants and I sure hope the new owners take care of and appreciate them. Gardening brings me so much joy and long term expectations of future meals

    Thank you for the Andrew Peterson book recommendation! We love his books and REALLY love his songwriting. "Be Kind to Yourself" is such a good song. I love any harvest that involves digging too - it is a wonderful treasure hunt!

    I just now chitted a couple potatoes to put in a 5 gallon pot to harvest in a few months. I love home grown potatoes too. There’s just something about putting a piece of potato in and then when it’s time to harvest, that treasure that grew and multiplied.

    I grew potatoes once many, many years ago, and they were the best I've ever eaten. I haven't had a real garden since then, maybe some pots that produce a few things, but nothing like that garden. Enjoy your bounty, and rest well to feel better soon. Blessings to you, as well.

      I always grow my potatoes in 30l black pots, its so easy and even easier to harvest (the whole reason to do it like this). It allows you to control the moisture easily too. I'd definitely recommend it. Theres a guy that only does his potatoes this way even with a huge allotment, look up simplify gardening for tips. Loads of people now do it though :)

    1Fresh dug potatoes are the best. We call them new potatoes, and the skin is so soft that all I have to do is scrape the potatoes to peel them. The first harvest I cook the potatoes with fresh green beans or canned green beans and ham, with a large pone of cornbread. You are sure bringing out the memories. I just love watching your videos.❤❤❤

    I dehydrate the tops of onions that bolt and make powder and it is one of our very favorite seasoning in the kitchen! Definitely do it!

    I saw your little Instagram clip of this. And then I went and got to dig some of my own for the very first time! It was so much fun!! You're right, it totally felt like treasure hunting and it was like a dopamine rush to find a big potato! 🙃🤣

    Onion tops: freeze them til you have volume and time enough to make stock and/or broth. Use all those onion and garlic skins too (and other veg scraps). Yum

    Here in Finland, fresh new potatoes are a must-have Midsummer (juhannus) treat! People will pay arm and leg for a bag of potatoes to have for juhannus because that's when the harvest is just starting to come in. The texture of new potatoes is so different, and they taste amazing with butter and chives or green onions. Fresh potatoes are no good for mashed potatoes though, you'll just make glue if you try, so maybe that's why some people have the misconception they're not good to use. And yeah, I love the way the skin just comes off, we'll just put them in a 10-liter garden pot and spray them with the hose and the dirt and skins wash away in seconds, it's so convenient!

    Oh my gosh Jess! I am glad we are not the only ones that think about "slow food" literally for years! LOL. We just butchered hogs that we have two prosciutto hams starting! I hope you and Jeremiah show your hams when you cut into one of them! I remember decades ago when we planted our first asparagus crowns. Had to. wait the third year to harvest them and we just absolutely savor our asparagus every single year now when it comes on. Just melts in your mouth. We do that growing out our cattle thinking of all the glorious steaks and whatnot that we will have from them. We eat like kings and it's all from things we grow here on our land. Life is so so good and so full of surprises. Yay for surprise shallots!!!

    Thanks for this video Jess. I was feeling like such a slacker because I only dug 2 of my beds. So far I have 208 lbs and I’m trying to process them as we dig since we have very little space to cure them. I’ve canned 28 quarts so far and we’ve been eating potatoes pretty much every day since I started digging. I still have 2 rows to go but they’re going to have to wait at least until the weekend. Thanks for reminding me that it’s supposed to bring joy, and it does.

    I clicked on this video, excited to learn what your favorite garden chore is. I was very surprised to discover that your favorite is my most hated. I actually dislike handling smelly mushroom substrate less than I dislike digging potatoes. I am switching to a bucket system so I can dump out onto a tarp and see if that works better for me.
