Well the noors said there's no such thing as prophecy (i have to check it again) , it's just a choice. So the boy choose different path in the end and stay true to himself
I made the theory that the prophecies go by title, not a person directly. Kratos is Atreus' Father, but the prophecy showing his Father being in his arms turns out to be the All-Father being in his arms.
Kratos: Trains his son to be a better fighter and a better person so one day, he can be independent Atreus: Uses his earned skills and power to not only save his dad on multiple occasions but also strike an awesome pose

and the true fate of kratos is him being worshipped as a god. it even looked like that was what Kratos wanted, too, however subtle his expressions are.
It was originally Kratos. He changed fate when he told Atreus to 'open their heart' during the war. The Norns hint that if he doesn't change his nature like continue killing the gods, it would have ended with his death.
Kratos knows his bloodlines curse, but unlike his father and his father's father, he is not an idiot and knows how to delay it and be at peace with his fate

Atreus' section was enjoyable tbh I would like a game about him only. Having a faster ranged weapon and the ability to change into animals could open up a lot of cool combat and traversal mechanics. Imagine being able to access an underwater section by transforming into an aquatic animal or maybe even a winged animal to covrr terrains faster. Would actually be dope.
I don't know how his curse works exactly but from what I heard Kratos is unable to stay dead. This sounds cool until you realize he'll to see Atreus, his children and grandchildren die.

Kratos really did broke the cycle, Zeus never wanted a child stronger than him he never wanted to give up his throne. When a parent rejects and hates their child, the child grabs on to that and does it to the parent. Kratos learned what his hate, rage and need for vengeance brought, he taught his son to be better, he loved his child and nutured his heart, encouraged him to be rise above his father's past and be the fruit that Kratos couldn't be
