I'm from kerala. Actually for stew in Kerala vegetables are cooked in thin coconut milk and onion are not sauted in coconut oil. Then cashew nuts and raisins are fried in ghee are added , whole spices ( cloves, star anise, pepper, cinnamon ) are sauted in ghee. And one more thing , vegetables are square chopped . Please take the suggestion in a good way .
Kerala style vegetables stew is delicious and creamy. Since it is white in colour never think that it isn't spicy, traditionally pepper cones and green chillies are added for spice. Also since potatoes are added, garlic and ginger is added in a pretty good amount. Ghee roasted cashews are added for more taste. It is delicious with iddi appam or vellai appam.
I moved to bengaluru recently, and had this in a restauarant here. It was soooo goood. Specially since i love veg food over non veg. This was soo tasty. Now when i feel even slightly sick, i go for this and its so cozy and hearty and warming. Its such a break from all the spicy north indian food(no hate..i am from north india and i love that kind of food)
The veggies should be boiled in minimal amount of water and coconut milk is added at last.... N just bring to a slight boil in low flame... Not full boil... You have to off the stove before it starts bubble boiling... Coconut milk over boiled turns slightly curdy n changes the actual taste... I am Keralite n prepares stew often. N if you put a teaspoon of coconut oil n curry leaves after turning off the flame it tastes better as raw curry leaves flavour mixes up with the hot curry.
Thank-you so much for this recipe. I usually skip step 1 and cook the vegetables in thin coconut water. Next time I will try your style. Other than that the recipe came out good. Also, I add the tampering in the end. I use the same method for anything that calls for cashew nut/coconut/almonds. They all taste next level. 🙏

No. The flavour of kerala stew comes from coconut milk. It is the main ingredient. If you want to avoid hassles of grating coconut, just but coconut milk or coconut milk powder from market. Mothers recipe and coconad are good options

I love south Indian cuisine, it is light on the spices yet flavorful especially the dishes with curry leaves.
I remember eating this and it had black pepper corns. It was very different taste as it was pepper and coconut milk. Thanks for the recipe

Can we boil coconut milk for 7 long minutes? My mom always tells me not to cook coconut milk for more than a minute or two

Hi, what is the difference between Avial and Veg stew?
Avial has ground coconut instead of coconut milk, and also dahi. Avial often has spice paste, more veggies and is thicker gravy.
