The fact that.. even though Guga is known for his delicious steaks, Uncle Roger didn't react like "fall-off-his-chair" "OMG this is the best steak ever!" type of reaction... that leads me to believe that Uncle Roger can REALLY cook.
If you have watched Uncle Roger for very long, you certainly do realize that he knows his way around a kitchen. He must have had some professional training, or maybe grew up in a family kitchen in Malaysia (one that was professional). Or he has someone of his staff that can feed him the technical points he uses in many of his videos. Having worked in F&B in S Fla for some establishments with very high standards, I love Guga for his excitement and his experiments. He definitely knows his stuff! He reminds me of many of the people I used to work with in the tri-counties. (George from Deerfield Beach - wherever you are today...) Guga makes me miss S Fla really bad.
Leon definitely sounds like a food critic and he does an absolutely AMAZING job at it! I've just noticed the amount of extra edits/filters you used, please, you don't need these to produce a great video! It's even better without them! The smashed potato looks really delicious!!!
I believe the issue with the deep fry is the lack of solubility of msg in oil/fat the crystals never diffused into the wagyu oil. Thus it was just a normal first version with deep fry in wagyu oil

Guga, I think it's time to take these MSG experiments to the next level. There are substances called Disodium ribonucleotides, specifically they're called disodium guanylate and disodium inosinate. These substances, when mixed with MSG, result in 4 times the flavor enhancing power than MSG alone, and I've seen website where you can buy them online. Normally, the disodium guanylate and disodium inosinate are mixed together to make a 50/50 mix, which is called disodium ribonucleotides. This is then added to MSG at a ratio between 1:7 and 1:50 (i.e. 12.5% disodium ribonucleotides and 87.5% MSG, to 2% disodium ribonucleotides to 98% MSG). These substances are often found together in processed foods like Doritos, instant noodles, snacks, crackers etc. Don't be scared by the chemical sounding names. Guanylate forms a significant part of DNA, and inosinate is chemical used to make certain nucleotides, which make up DNA and RNA. Basically, if you've ever eaten any living thing, you've eaten these chemicals. Inosinate and guanylate are found naturally in some foods, and are also produced in the digestive system when foods containing DNA/RNA are digested. So it's completely safe to consume. The second one is better because when you brine with msg it's reabsorbed into the meat itself while deep frying with msg oil doesn't penetrate the meat as much.
I think wagyu steak fried rice, with some nice grill charring on the steak, would be just the perfect thing to offer Uncle Roger. That might be something to consider for another collab sometime down the road. You definitely did well here, Guga! Did you notice Uncle Roger called you "Uncle Guga" at around 8:51?
