Hi Kathrine, I always see your baking but May I know Why you will used 2 baking tin ( 1 tin for the cake itself & 2nd tin is to put the 1st baking tin) than only u put inside the oven. This step normally you will used during you want to do “ water bake “ !!! May I know WHY??? Can I just directly put 1 baking tin than outward is water surrounding my baking tin????? My guess is that, her 1st baking pan is removable type. So to ensure water doesn't seep in into baking pan that filled with cake batter. Or else cover the. removable baking ban with aluminium foil thoroughly and place it water bath.
The method to remember: "Square more than Round" Capacity of square pan is always more compare to round pan for same size/width. So 7" square pan can use 8" round pan, it's same capacity. While capacity for 7" round pan you need to use 6" square, also same capacity.
8" square pan sure will be a little bit shorter but the height for your mould only 1.5", it is a bit swallow to make this kind of cake. You may line the paper even higher at the side to prevent the batter flow down when baking in the oven. As you can see author's mould probably is 3" height, and she did line the paper even higher about 1" to make sure the cake have allowance to 'grow up'.
The baking powder agent is the egg white with the beating method of the meringue. It is natural ingredient rather than use baking powder or baking soda. And also baking powder or baking soda won't be able to create this kind of sponge cake texture

模具底部进水了,可能模具有洞孔或模具边有小缝是肉眼看不见的。多加1-2层的 aluminium foil 包在模具外层就解决了。

请问为什么咖啡面糊部分跟着分量做了,可是做出来水水的。蛋糕出来后低部还有一层沉低了
搅拌一起的那个过程不恰当。影片里大约5-6分钟的那段,面糊和蛋白搅拌的过程,是以挂到式的慢慢搅拌均匀,万万不能快搅或随便混合就算了。不然蛋白的泡泡都没了,就会变成水水的,不会发,还沉底。
因为这种sponge cake是靠打发的蛋白来膨胀,口感就会变松软。你已经把它的“发粉” 功效破坏了。

Put in lowest rack. The top too near too the heat rod.
