Take a small quantity of sugar or raw sugar while using a lot of fruits as the fruits contain natural sweetness. So no need to add sugar if you're using total fruit or grapes or any fruit pulp

Just wanted to confirm what is the ideal time for primary fermentation and how does temperature alter that function. Thanks for the video though.
To protect the wine from fungal infection we use Campden or sulphite or you can use pasteurization in which we heat the wine to 80 degree to kill the bacteria. Using wild yeast present on the skin of the fruit is a major cause of fungal infection. Ur Lucky us Wine Didn't get a Fungal Infection. Use good quality of yeast if possible, wild yeast is risky. U can re-use good quality of yeast again and again not to buy it for every time. I will show u that in upcoming video. 7 to 10 days is the ideal time for primary fermentation. If the temperature is high then even 5 days are sufficient. And if the temperature is too low, it may take a long time, and the same is for secondary fermentation. Fermentation in wine stops at very low temperature.

Sir, I started preparing black grape wine on 22 Jan 24 and filtered it after 14 days and left it for secondary fermentation with the ballons (without punctureing)on the plastic bottles . It has been more than a month but it has not become tranperant yet as you mentioned. Pls guide what to do next.
Have you added pectic enzyme into it? Now there is nothing much to do with it. Just bottle the wine and keep all the bottles in the refrigerator for a week or more. After wine gets clean and whenever you want to enjoy it then again you have to take out wine to another bottle as you will find sediments in the bottom of the bottle.

Hello sir, I'm currently in the process of making 18 liters of wine with 12 kg of ripe black grapes, using your recipe. Unfortunately, I mistakenly used sodium benzoate instead of sodium metabisulfite. After washing the grapes, I rinsed them with water containing one teaspoon of benzoate, and I also added a pinch of benzoate to the fermenting jar. I later discovered that sodium benzoate halts fermentation and kills yeast. With 12 hours left before I plan to add yeast, I'm concerned about achieving proper fermentation. With you video I tried my hand at making grape wine. The fermentation went very well but from day 2 of fermentation it smelled like vinegar. Now after 9 days while putting it in secondary fermentation I sipped a spoon and it tasted little sour. So is it infected and wasted?? It still smells little like vinegar.

Bro you can skip the chemicals and also the yeast. I found it fermenting without yeast as yeast are present on grape skin. Still adding papaya skin is a good idea

Look dear it is not necessary that your wine is made on the 21st day., it depends on the fermentation process and then after it is properly cleaned... sometimes it takes too long to clean. Beer and wine are both fermented beverages that make ethanol it 100% safe to drink. When we make distilled drinks like whiskey, vodka, rum, gin, methanol is introduced, which is fatal, causing blindness and sometimes death when methanol is not properly separated from the distilled drink. 🙏

I am a little confused Bhai. At the beginning of your video you mentioned 100 gms sugar per litre but later on in the video you have shown adding 200 grams sugar per litre. Please clarify. Thanks.
100 grams of sugar is for per litre of juice and pulp mixture. 200 grams of sugar is for per letter of water. For example u have 2 litre of juice and pulp mixture and u have 3 litre water then u have to add 200 grams of sugar for pulp and juice mixture and 600 grams of sugar for water, so total amount of sugar is 800 grams. I hope you got it now

It makes a sugar syrups with alcohol not wine. Wine needs full of flavours ,no need to add water and sugar of your hydrometer read. SG 1.07 to1.04 ,to balance acidity you can dilute with water or add acid blends into it. Better do a pH test

Jub aap ki 3-4 wine sahi ban jaye or aap ko lage ub dikkat nahi hai or aap wine banane k baare mai samjne lago ho to aap paani kum use kejeye ga or sugar bhi kum use hogi. Almost 100% pake huwe fresh fruits ya fir juice bhi le sakte ho haan thodi sugar add krni hoge.

Enzymes are not chemicals, Pectic enzyme helps in breaking fruit wala, easy to extract juices from fruit and also works as a fining agent you can skip it if you wish.

Sir, I started preparing black grape wine on 22 Jan 24 and filtered it after 14 days and left it for secondary fermentation with the ballons (without punctureing)on the plastic bottles . It has been more than a month but it has not become tranperant yet as you mentioned. Pls guide what to do next.
Have you added pectic enzyme into it?
Now there is nothing much to do with it. Just bottle the wine and keep all the bottles in the refrigerator for a week or more.
After wine gets clean and whenever you want to enjoy it then again you have to take out wine to another bottle as you will find sediments in the bottom of the bottle.

Hello sir, I'm currently in the process of making 18 liters of wine with 12 kg of ripe black grapes, using your recipe. Unfortunately, I mistakenly used sodium benzoate instead of sodium metabisulfite. After washing the grapes, I rinsed them with water containing one teaspoon of benzoate, and I also added a pinch of benzoate to the fermenting jar. I later discovered that sodium benzoate halts fermentation and kills yeast. With 12 hours left before I plan to add yeast, I'm concerned about achieving proper fermentation. If not, what steps should I take? I hope to receive a reply in time. Thank you.
Potassium metabisulfite and sodium metabisulfite is almost equal.
The quantity of metabisulfite is almost correct.
Just add yeast after 24 hours

With you video I tried my hand at making grape wine. The fermentation went very well but from day 2 of fermentation it smelled like vinegar. Now after 9 days while putting it in secondary fermentation I sipped a spoon and it tasted little sour. So is it infected and wasted?? It still smells little like vinegar.
Keep it airlocked properly and do not taste it before it gets clean.

I'm here in kathmandu and unfortunately wine yeast, Sodium metabisulfite, peptic enzyme, Bentonite so and so forth are not available here. I decided to use bakery yeast, papayas skin, hot water. Am I going right way?

Bro you can skip the chemicals and also the yeast. I found it fermenting without yeast as yeast are present on grape skin. Still adding papaya skin is a good idea

Look dear it is not necessary that your wine is made on the 21st day., it depends on the fermentation process and then after it is properly cleaned... sometimes it takes too long to clean.
Beer and wine are both fermented beverages that make ethanol it 100% safe to drink.
When we make distilled drinks like whiskey, vodka, rum, gin, methanol is introduced, which is fatal, causing blindness and sometimes death when methanol is not properly separated from the distilled drink.

@@134Ankit In rainy days boile fruits along with water, sugar and spices if ur using spices, keep it for fermentation after cooling down . This is for prevention from fungal infaction in wine.
I am a little confused Bhai. At the beginning of your video you mentioned 100 gms sugar per litre but later on in the video you have shown adding 200 grams sugar per litre. Please clarify. Thanks.
100 grams of sugar is for per litre of juice and pulp mixture.
200 grams of sugar is for per letter of water.
For example u have 2 litre of juice and pulp mixture and u have 3 litre water then u have to add 200 grams of sugar for pulp and juice mixture and 600 grams of sugar for water, so total amount of sugar is 800 grams.

It makes a sugar syrups with alcohol not wine. Wine needs full of flavours ,no need to add water and sugar of your hydrometer read. SG 1.07 to1.04 ,to balance acidity you can dilute with water or add acid blends into it. Better do a pH test
