Chef Corso, let me preface my comment by saying that your channel is wonderful and that it has renewed my enthusiam for trail cooking and expanded what I think is possible while hiking! So please don't think of this comment as a criticism - I think of it more as a way of appealing to a new segment of viewers. I'm 54 and have mild high blood pressure, like many of your viewers over 50. This dish looks declicious and I plan to try some version of it, but... by my calculations this single dish has more sodium than the entire recommended daily allowance. The instant mashed have 2,000 mg before you've added bacon - gasp - cheese, and Franks red hot, so the final result is in the sodium stratosphere for us older folks. I figure I can adjust your recipe with regular dried potatoes, powdered milk, and the rest of the ingredients, but may I suggest that a low-sodium version of some recipes is always welcome? Again, your channel has opened up a world of trail possibilities - thank you!
thanks for the thoughts D. I hear ya. This is up there in sodium, but some folks may be drawn to that. We have plenty of "healthier" recipe options for ya!
These name brand potato flakes are terrible from a health perspective, buy the generic boxed and dump them into a baggie for your pack. After that I encourage you to do your own research, it's not the salt it's the sugar to look out for.
Average daily sodium is for someone sitting on a couch. A strenuous hike, especially in warm weather blows that recommended sodium advise. For someone who does not have high blood pressure, this recipient is almost perfect. Im 59. Thanks again for another great idea Corso.
I got one for ya, Layer salmon or tuna from foil packets in the bottom of a 7 inch skillet, cover with crushed potato chips and cheese. cover and bake on a low heat for ten minutes or until the cheese is melted.
I love doing things like this. After the bacon is warm, I will normally add the whites of the green onion and a clove of garlic to the pot for a minute before adding the water. It adds so much flavor to the final dish. Sautéing the whites of the onion with garlic and ginger is a great way to start most asian flavored dishes as well. I even toss in some peanuts to stir fry a bit on Thai meals. Minor amounts of cooking lead to outsized flavors in the final dish.
I don't do camping and don't know why this was recommended. But a tip to cover your protein requirements for the day is just add a tablespoon/15g of plain collagen to a meal or starch. It's basically a complete protein missing only tryptophan, and has an amazing amino acid profile. Dissolves hot or cold. Can premix into oatmeal or instant potatoes and so on. Doesn't change the texture or taste of the food unlike whey or protein powders and is very easy on the digestive system.
This may not be good for backpacking but maybe for camping. I tried Idahoan Butter Flavored Mash Potatoes and made potato pancake and it was soooo good. Ratio 2:1 Mash Potato Powder : Self Rising Flour, same amount in water. One Potato Pancake: 1/4 cup Butter Mash Potato powder + 1/8 cup Self Rising Flour, mix dry ingredients, add 3/8 cup water & mix, rest a couple minutes and potato powder will absorb all the water, skillet fry in oil, add pancake syrup. The gluten in the flour is the binder for the potatoes and is self rising.
I tried doing an elevated mash potato bowl. I used powdered milk, part of a powdered gravy packet, celery, onion, a chicken packet, and dried cranberries. It could still use some tweaking, but as close as I could get to thanksgiving on the trail.
Hey, Chef Corso! What a site...The Light Sport Air Force highlights the art of "Flamping" (flying/camping) and, though we don't backpack, the weight and space limitations of our aircraft cause us to utilize backpacking equipment, etc. in maximizing the adventure. I'll be referencing you and your channel when addressing the art of cooking in future videos. Keep cookin', Sir! Cap'n Bruce
Dehydrated green onions from Walmart, real bacon bits from Costco, dehydrated vegetable mix and dehydrated peas, saves space in cooler if car camping, saves weight if backpacking and just takes very little time to rehydrate. I even bring Anthony’s dehydrated butter, is real butter and can’t taste the difference, Anthony’s also has dehydrated cheddar cheese, it won’t melt but is real cheese and adds taste. Love your recipes so much I’m saving your videos.
Good stuff. They make a difference. I dehydrate green onions from my garden. A small garden and a cheap dehydrator can really make your trail food pop.
New Subscriber. I "Like" & rang the notification bell. My own pre-cooked bacon is something I carry in a pouch & munch on during the day - anytime, anyplace, with or without anything. I've often prepared Idahoan Instant Potatoes as a meal - I always add some chunks of my pre-cooked bacon. Never thought of fresh green onions, something I'm going to be adding to most any & all Freeze-Dried meal from now on. I do add a couple of shots of Tabasco Sauce to most any Freeze-Dried meal for flavoring - &, of course, Bacon. Warm Regards from Reno, Nevada
A problem with a lot of freeze dried or dehydrated herbs is people use them wrong. Take the chives, soak them in water to hydrate them and then use them. Don't just throw them into your food. Same with garlic powder. Garlic powder is 300% better if you hydrate it before using it. Btw, I completely agree on spring onions, I use them all the time on trail. And broccoli will stay nice for 5 days too. I even take cherry tomatoes. But I am on my 11th Thru-hike, I am sick of hiker food, so I don't mind carrying a bit extra weight for decent food.
Easy and looks tasty. I brought a handful of green beans on my thruhike. They would last the week and I’d put 3-4 in a meal to give me freshness every day.
Dried peppers, braise chicken chunks in a pot with a packet of Italian dressing, dried bbq beef with a packet of bbq sauce mixed in, add cheese- lots of combos with this. I even eat instant mashed potatoes and dried eggs for breakfast.
I have been trying to come up with a way to have meat on day, 4, 5, .. and obviously I cant keep a steak cold for that long. I really like the bacon/bacon bits idea. alternative to jerky.
Your videos are freaking incredible!!! Another great idea that I'm going to try. I'm going with one with summer sausage and cheese as a start and work my way up from there.
Welcome back to Austin, hopefully you misses icemagedden2023. Love the new personalized knife :) You also have the brisket in the mexican food section at HEB that is amazing with the mashed potatoes. "Rip N Ready Shredded Beef Brisket Smoke Flavor" (with or without sauce), mini pepperoni's or little smokies.....
Quick question, I’ve often simply done the dehydrated meals on trail. But I’d love to explore some of your options. Have you ever done a video on cleanup in the backcountry?
Hey AD. Welcome to the better way to eat outdoors. So many tasty options. Yep! HOW TO CLEAN A CAMPING STOVE / CAMPING POT | Backpacking, Hiking, Camping Tips th-cam.com/video/njfNw6mJSeE/w-d-xo.html
Some good ideas although I would use an anodized aluminum pot to prevent scorching. I realize that anodized aluminum pots don’t come smaller than 1L, but I only do day hikes where weight isn’t a big issue for me. Unfortunately I have high blood pressure and that IS a big issue for me. My doctor said to limit my sodium intake to under 1500mg a day so this recipe wouldn’t work for me.
rarely. when I do, I crack and mix before hand and pack in an old soda bottle. Hardboiled are great for short trips. Powdered eggs aren't that bad when mixed with something

Great idea, with the fried onions!
Next time you run in to Arby's for that Jamocha shake, grab some of their Three Pepper packets, SO GOOD on a potato - YUM!
Excellent idea, I'm gonna grab a few of those packets later today.
I have been trying to come up with a way to have meat on day, 4, 5, .. and obviously I cant keep a steak cold for that long. I really like the bacon/bacon bits idea. alternative to jerky.
bacon, summer sausage, smoked salmon all great options. and don't sleep on plant based protein. they can really help for longer hikes
Fancier then mine, I use the garlic and herb pack with dried 🌶.
I love easy recipes like this, and yeah, a little green onion goes a long way on trail!
Great basic, and then you can ad herbs, veggies, cheese, spices and gowing wild…;-) . (I use my own freeze dried veggies)
Your videos are freaking incredible!!! Another great idea that I'm going to try. I'm going with one with summer sausage and cheese as a start and work my way up from there.
Cheers NN! Good tasty modification there. Make it your own!
Exactly the channel I was looking for, I don’t want to spend 10 dollars on one freeze dry meal.
welcome aboard!
I do it mushrooms and gravy
You can also add butter with herbs, adds ton of flavor to plain potatoes :)
You can carry Anthony’s dehydrated butter to save space is absolutely delicious.

@@ChefCorso Thanks!!! I love cooking, and am looking forward to trying some of your recipes on the trail!
Let me know if you have any other Qs
Cut up the bacon( that you precooked at home )put ounions is your boil ( was really glade to see that you did not throw the water out ) !
Is that the ripsnort knife? That thing is awesome
It's actually a different model and brand. Stay tuned later in the spring for more knife content. 👐

no worries, we have plenty that can work for you. check out outdooreats.com
Is that an ultralight cutting board and chef's knife? 😂 I only kid, looks great!
Did you buy precooked bacon or did you precook it yourself? Will it last a couple of days if you pre cook it yourself?
I've done both. For home cooked, it lasts a day or two
the bacon on the ground is great and safe...........
Luckily…I survived
Do you ever pack out eggs? Raw in shell, hardboiled, the stuff in a carton? I could eat eggs every day.
rarely. when I do, I crack and mix before hand and pack in an old soda bottle. Hardboiled are great for short trips. Powdered eggs aren't that bad when mixed with something
I like Smoked salmon in my potatoes
Is precooked bacon just bacon you make at home ahead of time?
Hey SB. It can be cooked at home or something like this: amzn.to/3QQZfcT
Thanks! I didnt know that was a thing.
What knife are you using?
here you go! outdooreats.com/product/storm-king-foldable-camp-knife/

Does that stove have simmer control?
Msr pocket rocket can be turned down to simmer but you have to watch it.
ditto
300ml!!! Mp calls for 2 cups mr. ❤
vegans, tvp, seeds, nuts, nutritious yeast,... im not a vegan, but could see salmon jerky in here,...mmmmmm
what I hate the most about this meal being cooked in the pot is cleanup. practically impossible to LNT because you have to rinse it out.
can't say I agree itt. check this out for LNT cleaning: th-cam.com/video/njfNw6mJSeE/w-d-xo.html
You bought pre-cooked bacon !
Bac-o’s are vegan…
… and if you are looking for some vegan cheesy goodness try nutritional yeast
ew
With all that onion your not going to taste anything else. What a waste of good bacon.
sounds like double bacon for you 🥓🐖
