So if your knife gets wet, you can’t open it?Shear genius. A dry reisling may be more appropriate.
Camp tip, be a rebel and remove the humongous regulations tag unless you enjoy the nighttime reading.
When I fled WA state for greener pastures, I did miss my LandJaegers. Every time I go back to visit family I load up on that stuff.
I'm proud to be a dirtbag !

Hey man just saw your car love the vids
Cheers Josh! Great to be in Santa Fe. Want to help with a video next week?
That dude needs to learn how to pack a pack , how uncomfortable and to see that tent flop around drove me nuts...
I have a hard time imagining the world without a good knife.
I love your channel but …Nooo (channeling my inner Michael Scott) I was so excited to try this. I tried both ways, cheese and bacon in one and peanut butter and jelly in the other. Total bust. I would’ve been so bummed out if I had been stuck with this for breakfast on trail for a week. Doesn’t even remotely taste like grits. It taste like raw ,sweet instant cornbread batter. This one wasn’t for me but I can’t wait to try some of your other recipes. I really do enjoy your videos. Thank you for all the effort you put into it.
Bummer to hear you didn’t enjoy this one. It’s a fan favorite for a lot of people. You can also try it regular quick cooking grits. Look forward to your next recipes test. Cheers!

Biryani = minute rice, frech fried onions, tumeric and Shawarma seasoning to taste.
love it. make sure to throw in a little oil or coconut oil to get the crispy bottom!
Great stuff. Gives me a little trepidation watching you cook on the bank of a water source. Doesn't take much to tip over your meal. Not everyone is graceful.
Ha, true, true. Luckily no spilled pots this round.
@@ChefCorso Fellow PNWer. Love the trails around these parts. You've given me a lot of food for thought!!
@@paulb1915 cheers P!
Thanks!
Cheers!
Yum! I never considered rice in the morning before. I was worried about the prep time until I saw this.
It's a great breakfast option, especially on the trail!
Brown or wild rice healthier
it really depends on your perspective and goals.
"Middle of Nowhere" may be an idea. I've been on foot in small Hamlets and in big Metropolis and in these situations been no where near more than a variety shop or gas station. Without the convenience of a home and kitchen, standing on a street with the "now what" expression is a tough spot to be in :)
I want to go that lovely lady could show me round anywhere. I would treat her with great respect and dream.
What happened to the cherry wood they used in the seventies?
" look at this one they are really nice" yes mate I would love to have had a look at your secret knife it's a great big shame you didn't show it to us. I'm turning it off now and I was interested but you are not showing us much.
a peeler attachment as well.
Great. I have them. the best food prep knife i thing you can have. very sharp and very east to sharpen. I love them. I have that kit in my lunch box for work with the spoon and fork. It is great.
Thanks for this great tip Chef Corso!
Cheers R!
How many miles do people walk on their hike? Is there a range of how many miles people walk? Per day.
it's variable based on the trip and your fitness level. 5-15 miles a day for a normal backpacking trip, 15-30 for long haul thru-hiking. Some do even more if they are trail running!
@ that sounds about right now that you put it that way. Love your Vids! I am watching all of them now. I am a Foody and love the creativity of meals on the go!! Or let alone anywhere. Thinking of going to Chef school at 60. Crazy huh?
@ Cheers D! Glad you are enjoying the content. And good on ya if you take the full culinary plunge!
Beautiful nature
I’m new to the channel and I love trail meals! I’m no TH-camr but maybe some good ideas would be walking into a store with a limited amount of money and trying to make good trail meals (like your jiffy pbj grits)! Or maybe making trail meals where a main ingredient has to be subbed for an allergy-friendly option. I pretty much just watch for your food and your personality so whatever you do I’ll enjoy
Or another idea would be making the same meal but at different weight/price points. Like first you make the meal with a full blown camping stove, skillet, fresh ingredients. And then you make it with a pocket rocket stove and dehydrated ingredients, etc
@ cheers BC. Good ideas and thanks for following along!
Loving your camp meals, but I also had to giggle a little bit when I saw you throw all the Veg on the ground. There has to be a tiny bit of extra grit (fiber? Minerals?) In the meal.
Cheers Steph! ha, yea. I don't mind it and I think we are going to be fine if a brussel is on the ground for a minute or two😆
Am I right that you add raw bacon. This is what I learned about pork Trichinosis, more commonly known as trichinosis, is a parasitic foodborne disease caused by eating raw or undercooked meat, especially pork products. The products/product infested with the larvae of a type of roundworm called trichinosis can make you really sick. Otherwise it looked really good 😊
this is precooked bacon. I would not recommend packing raw bacon on the trail away from refrigeration for very long.
@ChefCorso Yes, I thought so, but it's best to ask 😊
I love the boiling water channel. So much safer than your no-bake chia bomb. 😅💣💥
We love the real-time edification on the use of the powdered eggs in the pasta water, you are so authentic!
Cheers B!
We love sumac and coconut powder!
I have to skip the blue cheese, add some Jack cheese and spinach topped with some toasted panko, why skimp out 😊
all good, cheese it up how you like!
I'm trying that one next chance I get! Thanks Chef Corso!
cheers NHB! also a great one for inside cooking too😉
Looks tasty! How long will blue and cheddar cheese last on the trail during the summer?
depending on your temp and trail conditions, a few days. Sweaty cheese still tastes good...ha!
Simple. adaptable and without a doubt tasty. Can´t ask for more.
Glad you like it! It's an easy, great one
I like my cheese, when it's not too blue.....I'll let you have mine and double up on the cheddar. Looks easy n soooo yummy! Yummmmmmmmmmmmmmm
Cheers, and double up on the bacon for me too!

That looks awesome. All my favorite flavors! Thanks for video.

This channel is AWESOME! instant subscriber!

Chef, didn't you have a mini whisk in your kit, too...?
I have a small one for car camping, but I don't usually bring a whisk backpacking.
Has anyone tried pork rinds in your ramen? Crispy pork skin is delicious in restaraunt ramen, so I thought it might work in backpaxking ramen
definitely a great add. And pork rinds can work in many meals. Check this one out: th-cam.com/video/Eqlx6OsiEgc/w-d-xo.html
just fyi, it was your video with dan becker that allowed me to find you. So from that, I have watched several other of your videos and then I ordered all your damn books. But what a nice Reese's Peanut Butter cup accidental collision, a backpacker who is a chef. Perfect.
welcome aboard and thanks for the support! It been a pretty great combination for me as I get to get outside more and I love teaching folks how to elevate their outdoor meals.
I like to cold soak my lunches and sometimes breakfast. How about some creative ideas for cold soaking? Love your ideas!!
roger
Thanks for the recipe Chef! I'm going to try with ramen noodles (no ramen seasoning packet) and experiment with couscous. The couscous mainly because I like the name couscous carbonara. lol
love it and Im sure this is going to be great with other carbs. also love a good alliteration, ha
Thanks chef, that is the nearest to a proper carbonara without Guanciale, that I have seen and well worth trying. Thanks the limey
cheers! If I was making a classic Carb, I would absolutely use guanciale but the bacon is a great outdoor hack to get the close flavor
Are you using freeze dried eggs or regular powdered eggs?
Just powdered but can work with either
I remember watching this one when I first discovered your channel. I’ve been to that creek many times. Olive oil seems like a good addition. If I was making this on the first day of a backpacking trip, I think I might opt for pancetta and fresh ground black pepper. Trader Joe’s has an Italian four cheese blend my family and I have been into lately. They also have a nice chicken Italian sausage that if frozen would transport quite well on a cooler month hike. Keep on cooking 🧑🍳
love all of what you said here. And I love that creek in the Staircase area. It's like fern gully in there!
