    koo chye is maybe garlic green can can maybe substitute with leeks and or onion green.

    Use Adabi traditional sambal chilli paste RM$4.50 a can (1 tbsp) and 1 tbsp common chilli boh (spiciness)for 2 servings noodles. Seasoning : light soy sauce, dark soy sauce & oyster sauce. Fried garlic oil (must) noodle will taste better

    taucheo seems to be salty fermented soybeans. Probably better to consume less salt. It is for umami and can maybe substitute some other fermented soybean condiment.

    This is not the traditional mee siam. It is just a nice looking fried beehoon.

    Most countries probably do not have asam gelugur so have to use a different ingredient to make the dish more sour.

    There is no such food called Mee Siam. Firstly, it's beehoon, NOT Mee. Tomyam beehoon is NOT Mee Siam.
