- [Preparation] Common materials for dry stir-fry and soup version
Pan-heat or oven bake Tau Pok, cut into cubes
Deep fry 50 gram of peanuts then blend them
Add 60 gram tamarind to 300ml of water, squeeze out the juice and separate into two portions of 150ml each
Chili Base
*Dried Chili 30g
*Red Onion 100g
*Dried Shallots 50g
*Garlic 15g
*Lemongrass 1 stick
*Dried Shrimp 30g
*Belachan 15-20g
First soak dried chili and dried shrimps, pan-fry belachan into powder
Then put all the ingredients in a blender, add some oil to blend
Stir-fry with oil after mashing (until the paste turn dark red)
Divide this chili base into 3 portions
Stir fry some prawns with the remaining chili oil in the wok
Mee Siam (soup version)
[Ingredients]
Anchovies 50 gram (ikan bilis)
Salted Soya Beans 1½ tbsp
Tamarind Water 150ml
Fried Chili Base 2 portion
Bean Sprouts
Stir-fried Prawns with Chili Oil
Hard Boiled Egg 1pc
Tau Pok Cubes
Chinese Chives
Calamansi 1pc
[Steps]
Anchovies (ikan bilis) Soup Base
*Fried 50 gram anchovies (ikan bilis) in oil
*Add 1000ml of water and boil it over medium heat for one hour
Mee Siam Soup
*Fry 1 portion of chili base in a pot
*Add salted soya beans and tamarind water
*Add two tablespoons of sugar and one teaspoon of salt
*Put it into the boiled anchovies (ikan bilis) soup base
*Put in blended peanuts
*Then cover the lid on and cook on medium heat for half an hour
Mee Siam Rice Noodles (Bee Hoon)
*Fry 1 portion of chili base
*Add 1 teaspoon of salt for some base flavor
*Put in the rice noodles and stir fry
*Add two or three tablespoons of Mee Siam soup
*Finally add the bean sprouts and fry for another two minutes
Assembly
Pick up one serving of rice noodles
Pour in the soup
Put in the stir-fried prawns with chili oil, hard-boiled egg, tau pok cubes , chinese chives and calamansi
Soup version completed
Fried Mee Siam
[Ingredients]
Bean Sprouts
Fried Chili Base 1 portion
Tau Pok Cubes
Chinese Chives
Salted Soya Beans 1½ tbsp
Shrimp (season with salt and pepper)
Fried Egg Stripes
Tamarind Water 150ml
[Steps]
Heat up 1 portion of chili base
Put in the salted soya beans, a tablespoon of sugar and a little salt
Add the tamarind water and fresh prawns and stir-fry until half cooked for about a minute
Put the rice noodles (bee hoon) and stir-fry in high heat
Put a tablespoon of ketchup to add some colouring to the dish
Put in the bean sprouts and stir-fry for two more minutes, until the rice noodles is dried
Then put chinese chives and tau pok cubes and turn off the heat
Add egg stripes and blended peanuts
Done
