Old school chinese hotpot and I mean real old school like originated from Qing dynasty or that, features clean water as base soup because the idea was to bring out the flavor of lamb and beef as much as possible. The spicy base soup was originated in Sichuan where people loved spicy tastes and because people were too poor to have good quality meat so they used spices heavily to cover the bad taste of intestines and bad meat. So even nowadays around the world hotpot restaurants that serve good meat often serve base soup with limited flavor because soup with too rich a taste will overwhelm your taste buds and hurt the taste of good quality meat and fresh seafood as well as veggies
