I just had to try this. Followed the instructions pretty much to a T except I bought large yellow onions cuz I didn’t know how many would produce the 12 cups of sliced. I used my 15 cup measuring container (and actually used 15 cups of sliced), 4 qts of beef stock, etc. When I finished the preps I only was able to fill 5 of the jars and had about 3/4 of a jar of broth leftover. I used my 23 qt Presto Pressure Canner. I know everyone has a different experience with their canning recipes so I want to let you all know what my results were.
I've never tried that. When I have enough, usually dehydrate ours. Looks easy! Looks Good! Thanks for sharing. A couple of tips: When using a pressure canner, it's not necessary to sterilize jars. The process itself, sterilizes the contents of the jars and the jars. (Same for waterbath, if processed for 10 minutes or more.) Per Ball, no need to heat lids, anymore. When I setup to do a canning batch, I wash jars, lids & rings. Then, pair rings with lids. Set aside, within reach. I have a 9 tray Excalibur and heat the jars in that. (Can't remember if it was pints or 1/2 pints that fitted into the 4 tray I used to have.). The 9-tray will easily hold 7 quart jars, 16 wide mouth or 18 regular mount pints. After the jars drain, load the dehydrator. Set heat for high and turn it on in time to have hot jars, when needed. I've done well over 500 jars since I started using these tips. Had maybe a 1/2 dozen seal failures. Does save time, especially when doing big batches. Hope you'll find something useful in this. Merry Christmas and God Bless.

I am ready to make this delicious sounding recipe. Just one question as I am new to pressure canning. Is it safe to saute the onions in butter? I have read that when pressure canning you should avoid butter milk cream etc. I am conflicted on how to proceed. Thank you for the recipe.
I have a question. I love French Onion Soup. Want to know if You don''t want them brown because you prefer the flavor of the just translucent ones or because it could affect the canning? Blessings
You can definitely brown them if you like. 😉 I'm not sure of the texture if you cook them all the way first, they might be fine, they might fall apart. I'm sure it will still taste wonderful!
Too save on jars, could just have dehydrated onions and other stuff separate. Sounds good though. Been freezing butter and plan on more ghee. Hard to keep on on all I want for a long time. Tempted to buy canned onion soup instead.😂
Can I brown the onions first or would they turn to compete mush during the canning? I love FOS and when I make it on the stove, i always deeply brown the onions. I wonder if it would work for the canner?

The Ball recipe calls for carmelizing the onions. Browning the onions is okay and even good!
