Nice! Do you have room to sit up straight on your bed or is your platform/mattress too high? I have a RAV4 that I've considered using the way you're using your minivan, my set up would have to be a lot more compact (my friends and family would laugh at the thought of me being compact in packing anything 😂)...
I do not have room to sit up in bed however I easily could make the bed shorter. Because I have the seat set up in the back I do not need to be able to sit straight up in bed so I prefer the extra storage space under the bed.

I used these and pour my coffee over the grounds into the cup. You can heat the water either with an electric kettle if you have access to power, or by heating on various Gas or Propane Stoves. Thanks Tracey. So much planning and watching You Tube to get ideas. I have been camping and in RVs my whole life so just needed to figure out how to make the Van work for me. Last night was the last night I could sleep in it due to the heat. At a hotel tonight and I miss my Van🤣
